    I tried zucchini crust pizza since I had a couple of them in the fridge. I liked it but nobody else did. Yes, that’s pineapple and ham on my half. I was short of toppings and would have used anything.

    Thanks to the seasonal sales, made a standing rib roast using the reverse sear. I got the smallest one they had….

    OK, since no one's posted their Standing Rib Roast, I'll start

    I had a 5 lb two rib roast and I used a modified recipe.

    I put sliced garlic in slits that I cut into the raw roast. I then rubbed a mixture of butter, ground pepper, and herbs du Provence all over the roast.

    In an oven preheated to 500 degrees, I seared the roast for 5X the weight, or 25 minutes. After that, I turned off the oven and let the roast cook for 2 hours.

    IMHO, and for our (my son and I) tastes, PERFECT!!!!

    I did take it out a little early, at about 1:45 after shutting off the stove, but the meat was, IMHO, perfect rare/medium rare!!!

    Christmas Eve linner (lunch/dinner), not a typo!!

    @DaiLun, we also use the Linner term for a late lunch/early dinner. I also insert sliced garlic into roasts, lots of ground pepper and thyme.

    As for tonight’s dinner, our kids decided to spend Christmas Eve with their significant others. We thought about going out, but decided to stay home.

    Earlier in the week, I picked up a small rib roast with one bone, it was about 2.4 lbs., I removed the bone and sliced the roast into two steaks. I also picked up two 4 Oz. Lobster tails.

    So tonight, I grilled the two rib eye steaks, and used an online recipe for grilling the tails. Used scissors to split the shell, flatten and sprinkle with olive oil or melted butter and paprika, salt and pepper. Grill meat side down for about 5-6 minutes (4 Oz tail) and flip over for about a minute. I have to say, the lobster was perfect. Seafood goes from tender to rubber in a blink of an eye. I served it with baked potatoes, asparagus, and a spring mix salad with pears, goat cheese, candied walnuts and craisins with a balsamic dressing.

    Sorry, no photos, but it was as good as I’ve had at a restaurant.

    I would like to add that anyone can make this meal, I’m not so special. We have folks on this board with incredible culinary skills, but I’m just a hacker who loves good eats. Every journey in life starts with one step and for folks who may be intimidated, please realize that it isn’t your last meal on earth. There are so many videos online that will help you entertain very well without going out.

    Our Christmas Eve tradition charcuterie and cheese, and the best Christmas movie of all time

    The spread with the meats: a garlic and thyme cracker (on the board) and some Carr’s crackers as well, some ham(which was supposed to be capiccola and was mislabeled I’m kind of annoyed about that), prosciutto, and 3 kinds of salami.

    the cheeses: baked Brie with an orange fig spread, applewood smoked Gouda, a truffle goat cheese (the standout star of tonight) and a sub liner aged cheddar

    I too am a member of the Christmas Eve prime rib crowd. Smallest gathering ever. Only five including one vegetarian and one bird. Two ribs @5 lbs. 25 min at 500 then 1 1/2 at 325. Stand for 20 min. Like Dailin , slightly rare which is great for me but, perhaps not others. I included a couple cloves of garlic sliced and wedged in to meat and one whole onion sliced and thrown about. I also threw in a couple ribs in pan for eating and flavour for gravy. Only a few pics and forgot to take one fresh out of oven. Sides included Caesar salad with homemade dresssing , rosemary garlic potatoes, mixed grilled veg and bacon/park Brussel sprouts. Finally garlic butter shrimp for the non meat eater and a little surf for the rest of us.

    All done with a Beat Bobby Flay marathon in the background.

    We've been eating well over here in AZ: Braised short ribs on Thursday, tamales on Xmas Eve, crab legs for Christmas dinner. Plus bueno brunches.

    My wife is Italian and has always done the Seven Fishes on Xmas Eve, so that day we had, in no particular order:

    Shrimp cocktail
    Crab cakes
    Stuffed scallops
    Tuna
    Smoked salmon
    Clam sauce over bucatini

    The seventh fish hides in the clam sauce. She puts anchovies in with the garlic. They melt away but give quite the umami punch. I'm very fortunate to be married to someone who is skilled in the kitchen. My skills stop once I leave the grocery store.

    Tomorrow Opas smoked turkey. Tonight Brisjet Fried rice. I made a big pot of white rice in the Insta pot. First time I ever tried that. Rice looks great I’m going to have to drag my butt out of bed early to put the brisket on the grill. Tomorrow it’s the smoked turkey crockpot black-eyed peas and cornbread.

    I just got off 6- 12 hour shifts in a row. my friends asked me what I was doing for New Year’s Eve and I said nothing but getting drunk

    So I had to adapt my brisket. I did not have enough time to fully smoke/grill. I googled brisket in the instapot. It had enough time to have a good crispy slight char. I cut it into big chunks and finished it in my instapot- WOW. best brisket I ever made. My husband even said it was the bomb.
