It's that time of year. Soup with tomato, red and green pepper, mild italian sausage.

We are eating minimal-effort right now owing to the move. Grilled salmon last night, risotto and an arugula salad. Grilled sirloin tonight, tomato salad, broc, some kinda spud thing.

Thanks for the reminder that I need to clean out my fridge before I move!

Minimal here too, night before last was a tasty, tomato filled spaghetti. 20211109_174617.jpg

Forgot to take a picture, but today’s dinner was so good! Improvised a recipe to make a beef and vegetable Italian stew, with some red lentil penne in too. So yummy on a cold day.

My wife is off in Ireland with her mom (a lifelong desire for both of them) leaving myself and my daughter at home. My daughter loves Taco Bell but never had a Mexican pizza which is sadly discontinued.
Well, we can fix that. Made some copycat Taco Bell beef (ground beef with spices and a little
Oat flour as a thickener) got some refried beans and corn tortillas to fry tostadas and boom:

beans and beef on the first layer

    Top it up

and into the oven to get melty

    CD7D284C-B6BE-47A4-8D26-6A9A3435A7FC.jpeg

of course, need a couple of crunchy tacos to go with it

this really was just like Taco Bell. Up to you if that’s good or bad :). Plus we got to use some of the 50 or so extra fire sauce packets we had sitting around.

Yum! Here we are having creamy chicken and mushroom pasta, and trying a new sort of pasta made from black beans.

Weather is wonderful here. Fired up the pit. I am smoking a pork shoulder. Grilling some wings - Parmesan Garlic.

I'm going to give a recommendation -- this is not what's for dinner. But I don't get enough vegetables --ever and I never will. I probably throw away $50-$100 month of veggies away. Not proud of it at all. My husband does not do much cooking. I research a recipe etc. than my desire to cook deteriorates and it rots in the fridge. So I just started last week Field of Greens from Brickhouse Nutrition. This is the first supplement I've tried that actually tastes good -- mixed in a little light low sugar orange juice. This week I have felt like getting out doing my chores etc. on my days off. Usually I need the cattle prod set on high to get me moving. It's a little early to say for sure but so far I'm feeling less run down. I'm not high like crack -- it's just veggies. But I would rather drink my veggies and not let food go to waste.

Could be the last to know but thought I’d pass it on in case only second to the last. We prefer these onions when possible.

Regular water in a regular glass jar. They always go bad in the vegetable drawer in the refrigerator before we can eat them. We’re slow. But rather silly we got this far and still have to be told stuff like this.
These came home 3 days ago. So i guess we’ll have them for :feedme: dinner so to fit in the thread.

Still on 'tween casas mode but gotta cook 'cause I'm sick of takeaway. So I cut up a chicken, soaked it in buttermilk and then dusted it with S&P and shredded Parm. Convection roasting that. Risotto Milanese. Steamed broccoli. Drinking a Chateau St. Michele Merlot.

You're not the last. I love 'em, but I can't count how many I've thrown away. Great tip.

The duck ramen last night was fabulous, but no pics ;-) Roasting pork tenderloin tonight with cranberry sauce sauce and the leftover dutch oven garlic green beans. Can't wait! Have frozen leftover stuffing - making stuffed meatloaf in a couple weeks. Froze the little bit of duck leftover after ramen and that's all the Thanksgiving leftovers here ....

An unforeseen by product of trying to retain firmness in the onion it appears you can eat the tips forever. 75B8EFF1-37C8-4EBB-B1DB-A5289366A88B.jpeg

I do this but with old soup cans, and not only does it keep them fresh, but I snip off the top 2/3, use the middle 1/3, and the bottom 1/3 will usually sprout off and grow new ones a few times before they inevitably die from too much or too little water.
