    I didn't have to fire that many for outright theft, but you have to keep your eyes open. You also have BTs that overpour to get better tips. Unless that's SOP, that's a form of theft. Even doing that just to please a customer is a form of theft. If you're giving product away without the owners permission, it a form of theft. Many BTs do it thinking it's not much to worry about, but overpouring an ounce and a quarter shot by even a quarter ounce, your raw liquor cost would be 15% more than it should on that drink. Do that on all drinks and you got a big problem. If you normally run 20%, it'll jump to 23%.This is why control systems became more and more prevalent. Mom and pop places usually try to control it the traditional way. Large operations like nightclubs and casinos are forced to use various control systems.
