    Had my mom over so a made something I had a feeling she'd like.

    Roasted beets and roasted diced sweet potatoes with a little salt, pepper and butter. Cooked some cheese-stuffed spinach tortellini and tossed it all together with a homemade balsamic fig butter vinigrette, it might sound odd to some, but I know my mom's taste, she went nuts, so I was thrilled.

    Having a serious hankering for the homemade fried okra though...as seen above by Vwhiten....

    Well, for my last "Friday" made meatloaf in the crock pot, some green beans, and some cast iron corn bread.

    Might be lazy this week, and just marinade some chicken, and make some pasta.

    Out here, local corn (when you can get it) is mediocre and costs 60 cents an ear. Salmon, on the other hand, and halibut, rockfish, Dungeness crab, etc..........

    grilled pork tenderloin with my spice rub, roasted sweet taters with honey and cinnamon, fresh picked corn on the cob, home made Polish half sour pickles....

    just finished up making about 50 golombki... some for supper tonite, the rest in the freezer..

    Our niece gave us a cookbook when we rolled through last month: "Portland Cooks." It's a compilation from various restaurants and bars. We've just had our second session and really excited to cook through most of the book -- it's that good, there are so many things that sound great, which we don't say about a lot of cookbooks.

    Last night was shrimp on wilted arugula, with a marinara-cream sauce and prosciutto. I added a base of polenta. Outstanding.

    (Yes, I know, we use a lot of arugula. Mmmmm.)

    That fried okra looks so good and no one served that around here and it’s never in produce section for me to make myself. Growing up it was my favorite side dish. In the middle of a move so my dinner options are so limited. We had Chinese over the weekend and all that’s left is some white rice. Lol I think all my meat is at the new house in the 2 freezers we already moved. So....what can I make with what I have???? Give me an idea so I can look through cabinets and refrigerator. Don’t think chicken fries on rice sounds too appealing. Uuugghhh

    You do have grocery stores there, no?

    I easiest thing to do is grill or roast a hunk of meat, be it salmon or a whole chicken or a pork loin or whatever. Steam some veggies. Chuck in a carb you like -- bakers, gratin, quinoa salad, pasta with oil, garlic and cheese, whatever.

    We're both trying to get rid of the sore-throat gunch that is going around. Terri wanted comfort food for dinner so I'm making sausage and chicken cassoulet. And we'll roast up some carrots I just got from the farmstand.

    And the breading looks great! I'm not a big salt eater, but wtth fried okra I do like extra salt.

    Tonight I tried a recipe for Thai curry chicken made in the crockpot; I've never made it in the crockpot before...but you know, Pinterest ;). Served with rice and green mango salad. Yum!

    I think golombki is cabbage rolls....no idea what slice master is?
