A twisted route, but here goes: Maybe Mesa Grill? We cook lamb several ways using Flay recipes and it's always great. Best? I have no idea how to quantify that. But it the folks working for Flay do what we can with his recipes, it's gonna be a winner.

I'm a fan of the grilled lamb chops at Rao's in Caesars.

Yeah, I thought they were darn tasty as well.

Not CET, but the lunch special at Milos has some great lamb chops on the menu. It's a $10 supplement but still a good value for the Vegas strip.

Thanks to all. Keep the recommendations coming. I had a "windfall" of 275,000 RCs and I'm taking friends out to dinner.

Martorano's at Paris has had lamb chops on the specials menu. Never tried them but I once had the veal chop with lump crab and Marsala on top and it was to die for.

Not likely what you are looking for, but I thought the long bone lamb chops at the Bacchanal Buffet had a really good grassy and gamey taste.

The only lamb I've had in Vegas was the roasted rack of lamb at Eiffel Tower restaurant. Very good, although a bit heavy on the tarragon flavor for my taste.

Though growing up in Chicago, nothing compares to the chops you get at places like Greek Islands or Roditys, IMO.
