I never even heard of Tteokbokki.. I had to look it up. I love rice cakes! Yum. Were the rice cakes and dumplings prepared? Refrigerated or frozen? Or did you make from ingredients? I want to try everything pictured. Thanks Was already planning an Asian market run in the next few days.
The dumplings were frozen which I then cooked/reheated in the bamboo steamer. The rice cakes were dried/instant, in the same area as the instant ramen in my market. Lots of options, the one I got today was Dong Won brand

And now the reason I had gone to the Asian market to begin with (well, one of): Roy Choi’s kalbi with fried rice and some bok choy A little more charred than I intended (that marinade can turn to char really quick) but still fantastic. Not as good as the OC (original Choi) that I had at best friend but for a home cook it was pretty darn close.
Over the eclipse weekend I binged on carbs. 4 days worth and I felt like crap. Back on the low carb. I feel much better. Tonight chicken Alfredo with squash noodles. I bought a pack of pre sliced squash (vertical) then I sliced them into strips and air fried them. My semi homemade Alfredo sauce is Raos in a jar, cream cheese, Parmesan cheese and heavy cream. The chicken was Tyson’s chopped precooked breasts from frozen. My work schedule is terrible. I don’t know whether I’m coming or going. One coworker is constantly dealing with personal drama and always out on FMLA and we are piecing together our schedule. And I am probably a lazy Beitch - which explains my dinner in a jar semi homemade Alfredo sauce.

I’m going to the Mediterranean soon and plan to eat a lot of seafood. So I made a fusion pizza with Spanish anchovies, jalapeños, mushrooms, and leftover meatloaf. I liked it but DW wouldn’t touch it.
Balsamic glazed chicken thighs. Grilled up some chicken thighs on my foreman grill seasoned with dry Italian dressing. I had a prepackaged sliced mushroom, red onion, garlic & parsley from grocer- sautéed it butter and added a little balsamic vinegar, recipe called for honey- I used Swerve keto friendly brown sugar, & chicken stock. Xanthum gum as a thickener.
