Gran Lux Cafe is a solid place to eat. Diverse menu, good pricing.
Show: Le Reve at the Wynn is good. And close. Circular theater. There are only about a dozen rows of seats. We sat back row and it was the closest we have ever been at a Vegas show. Look online.
Gaming: Casino Royale used to be good. But the last couple times I have been there they have only had one craps table open and so many carny table games there wasn't a real blackjack table with a seat. It's close to Venetian with lower minimums but I thought it was a waste of time for me.
Other: Still the best thing to do in Vegas is to watch the Fountains At Bellagio with your sweetheart. I hope you find the time to do it.
Other, Part 2: Don't plan. Do what you feel like doing in the moment.

Show wise, Absinthe is a must see. I hear Carrot Top, Penn and Teller, Showstoppers, Love, MJ One, and a few others getting high marks.

If you are into Las Vegas history, maybe you would like a trip to the Neon Museum.

The spa at Aria has the best co-ed spaces like the salt room, heated stone bed room and outdoor pool.

Absinthe, Carrot Top and Zumanity have served me well on couple's trips. Spearmint Rhino is a good joint to take the better half as well. Can't help w spa, used to send the wife and sit at the bar playing VP until she was done.

The shows seem to be covered well by the previous replies.
For gambling I suggest a Craps table which can get like a party atmosphere.
Or play a slot machine together and have fun with the bonus rounds.
The community slot machine Deal or No Deal is really fun with two or more people when the major bonus round comes around.

Here is some advice from Vegas veterans of 37 years of annual + trips. Beatles Love and Zummanity are great choices . Watch for discount coupons or play MyVegas for free tickets if you have time. Google the strip clubs and pick one you like and all give free limo rides if you buy a couple drinks. Where you are staying is the Bourbon Room so don't pass that up. They open about 2 and the wild party starts about 9 or 10. Believe it or not right across the street from you is Gilleys and it's a blast late on the weekends Ruth Chris steak house is very close to you for romantic dinner. Also a free shuttle from Harrahs to Rio for Voo Doo roof top steak house and night club . Lots to do in the mid strip area you are staying in . Have fun

Canyon Ranch spa at the Venetian is amazing! Ask at the front desk about specials. Last time we were there they had a mani/pedi special for $85. If she's not interested in a service, it's only $40 to spend the entire day in the spa with the jacuzzi, steam room, salt grotto. We are now planning a full day there each trip.
