Renting a car is a must.
You mentioned you may visit the strip. Much easier access from South Point.
I am a big fan of both the DelMar Deli and the Mexican restaurant at SP.
GVR and Red Rock are just a half step up in class, but I find their room rates are usually far higher. Both have good restaurant and food court options...

Our flight was canceled 4 years ago and Westjet put us up at SP for the night. We really liked the room and the food was quite good too. We had stayed 5 nights at IP so of course SP was a huge upgrade.

The South Point was my Hidden gem from 07 -2010.Since then I have only stayed there once. Love the Little Café and the Chinese food and Sports Book but now it is way to crowded. Was there last year and when I arrived on a Tuesday night in August the Line to get in was like the old days at The Imperial Palace all around those ropes took 1 hour to check in.So now I just stay at The M.

Also I used to get great deals when I was going there steadily but since I stopped going the deals have dried up too.
