Short rib recommendations?

    Love me a slow cooked braised short rib.

    Wondering if any of you fine folks could recommend a good one on the strip? Any delicious short rib dishes stand out?

    Had them at Yardbird at the Venetian. They, along with the other food we ate there, were delish.

    Morels at Palazzo has an 18 hour braised, short rib dinner entree to die for. Delicious. :feedme:

    Does anyone remember Chef Alex Stratta’s famous braised short ribs? He had them at his first Vegas restaurant Renoir (in the Mirage) and then on and off at his namesake restaurant Alex at the Wynn. Damn I miss that restaurant! That was truly the grande dame of Vegas fine dining.

    I don't eat beef, but felt compelled to note that I saw the thread title, and my initial response was just "ribs". It's a recommendation and it's short and I stand by it.

    I'll admit to being inspired by Patricia Lockwood tweeting at The Paris Review, "So is Paris any good or not?"

    I've never really understood why Stratta couldn't find his footing in Vegas. He's a great chef, he's had great mentors (Alain Ducasse and Daniel Boulud, among others), Steve Wynn loved him, but he never somehow had the staying power of someone like Julian Serrano, who's had Picasso since Bellagio opened in 1998 and has literally not changed the menu in any material way since. I'm certainly not criticizing Serrano; as I've mentioned before on this board, Picasso is my favorite restaurant in Vegas (going by my count of the little boxes they give you on your way out, I've been at least eleven times). And the reason Julian Serrano (the restaurant) exists at Aria is because MGM basically said, "We want you to open another restaurant and it can be whatever you want", and he responded, "Cool. Gonna be tapas." But I never really could wrap my head around what the issue was with Stratta.
