Maybe a silly tip: park your car in a parking garage if you can, instead of on an outside lot, even if it means a little more walking.
With those temperatures and the sun, your car will be an oven and even touching your steering wheel lightly will hurt. If your car has leather seats, good luck sitting down!
I've made that mistake one too many times ;)

Original Sunrise cafe for breakfast. Eastern and Pebble. Try the jalapeno bacon.
Capriotti's sandwich shop for lunch. Several locations across the valley including GVR, RR and right across from SP. Chicken cheesesteak is my fav but the Bobbie (roasted turkey with all the fixings) is their most popular sandwich.

We like driving through Red Rock and do it on most trips. Stop at the gas station that's there (I think it's a Terrible's) and grab one of those cool $10 southwestern-style blankets (hard to think about in July, I know). Then, you can stop at Red Rock casino and check it out.

Not a silly tip at all!

I live in NC, and I actually prefer cloth seats rather than leather for this reason. I had a lovely Mazda with leather seats years ago, and I burned my legs in shorts SO many times when it was 90+ degrees that I swore off of leather. Vegas is even worse!

drive up Mt Charleston, to escape the heat, loop road with good visitor center, hotel, restaueant, also hiking trails, sometimes still snow up there even in June/July
Bob Taylors Ranch Steakhouse for great steaks in old vegas setting and very affordable
China Ranch Date farm is a nice day trip and very interesting
Hoover Dam and Boulder City, stop and walk the rail trail near the visitor center with sweeping views of Lake Mead
Grand Canyon West, shorter ride than south rim, so worth it in Hualapai indan Reservation- thats where the glass walkway is located
Pioneer Saloon, oldest saloon in NV rich in history and ghost stories
Nipton CA short ride away town was purchased by marujauna company hoping to make it a pot resort
    Need more???

Not sure how far off the strip you want to explore, but this is on our itinerary for our summer trip. Kayak on the Colorado.
