    Today I am cooking some calf liver and onions with copy cat Cracker Barrel cheesy hash browns and a spinach salad.

    We just had Spanish Chicken Marengo. Whole chicken cut in pieces saute in olive oil and butter. Put in slow cooker with diced Italian tomatoes, mushrooms and Spanish olives, add a few spices like oregano, basil and garlic powder. Served over rice. Yummo

    Garlic, Olive Oil, brown sugar, soy sauce, pepper & lemon juice grilled Salmon! With asparagus again holy cow, came out very good I’m kinda proud myself I never really cooked before ( I been domesticated as my wife would say lol)

    I made some Pancit for dinner tonight. There are different recipes/versions out there for Pancit, but my friend from the Philippines showed me how to prep this particular one years ago. It's made with rice noodles, chicken, carrots, onions, chicken stock, soy sauce, and usually cabbage, but I left that out since it's not one of my favorite veggies. LOL It's a the popular menu item, if you were to go to a restaurant specializing in Filipino cuisine.

    we had our version of chicken fried steak, smashed taters, and of course gravy. a brown mushroom gravy.

    I know that this thread is supposed to be about making dinner, but let me share with you some kitchen accessories that I received today in the mail.
    First, a new pair of tongs, and a salad spinner, for making hash browns

    I've had problems making decent hash browns for a long time, but I finally discovered that one of the keys is having the potatoes as dry as possible before you fry them.

    I was using the "press them in a dish towel" method, but I decided that there must be a better way, and this is what I came up with. I may be making them in the next couple of days, so I'll let you know how it works out.
    Something else that I'd been meaning to buy for awhile, an olive oil mister. I had been buying the spray bottle of canola oil for the longest time, and I figured I would skip that and get this

    OK, since this is a food thread, I'll add ingredients for what I'm going to prepare next. Salsa Quemada with roasted tomatillos and tomatoies. Here are the ingredients

    Tomatillos, roma tomatoes, serrano peppers, onion, and garlic. I requires roasting, which I may take outdoors tomorrow.

    Tonights dinner was leftover beef pho noodle soup.

    Carrying on with my tzatziki kick, made some lamb burgers from scratch which went amazingly with the tzatziki. I’ve been getting into making burgers from scratch too... getting the hang of it, I think!

    Got a couple of those left over, I’ll be making a “Loco Moco” with them sometime in the next few days to help me miss Vegas just a little less.

    Finished off tonight with a mojito that I made with chilled green tea. That is one smooth drink!
