Went for some retro today. Coquilles st Jacques with Caesar salad and fresh baked baguette (2nd attempt at the baguette, gradually getting better at it)

We were given a large gift of hamburger from a neighbor.
Made a nice sauce to go with our spaghetti last night! :feedme:

    Not pictured: garlic bread

Neighborhood progressive dinner. Midwestern theme. We have the soup course, so I made Wisconsin cheddar cheese and beer soup, with baguettes and a selection of local beers to drink. What could be more Midwestern than beer and cheese? Quality beer exists in the Midwest, but is not available here far as I know. Our Northwest brewers have it well covered.

Oh, and I also created a Jeopardy-style trivia game with Midwestern themed questions. So either it will be a hit or the neighbors will all be pissed at me for being a smartass.

wife bought some chicken to make for supper tonight, but when she opened the package it was a funky chicken, so I made a pork chop sandwich on rye bread from one of the leftover chops.

Just popped this in my small convection oven. Chicken enchiladas with a creamy Poblano Sauce.

The chicken enchiladas were a big hit. Mikey loved them.

I’ve mad a pot of stew for tonight.

Also have The black eyed peas with ham hock in the slow cooker for tomorrow.

My DIL is Mexican- she doesn’t cook though. But her mother cooks excellent authentic Mexican (Tex/Mex) food. Never store bought tortillas at their house. My husband says I cook pretty good Mexican food for a white girl. One of my dearest friends taught me how to make Chicken Mole, Mexican Rice, and Frijoles. To this day Chicken Mole is my all time favorite meal. No restaurant compares to her recipe. She got it from her mother. She passed away a few years ago way too young. I miss her all the time. Ohh and Calabacitas is really good. I never quite mastered it like her mom’s.

Here’s my Black eyed peas all ready for the New Year.

Like every other New Year’s Day, gotta have Pork for good luck. So dinner is Roast Pork and Sauerkraut, Mashed Potatoes, Green Beans.

I normally get a whole boneless loin and whack it up into chops, kebabs, and a roast. But today I just picked up a small loin and a bag of Kissling kraut, can’t use the canned stuff. I usually drain the kraut juice and mix it with a butter/flour roux, then pour it over the kraut surrounding the pork roast. This year I just emptied the bag of kraut around the roast, shoved it into the oven, and made a big martini.

I also had pork roll with breakfast and for good measure, had a McDonald’s Sausage Muffin (no egg) for lunch.

Mom made greens and I did the black eyed peas. As usual. And of course had that with cornbread. [IMG][IMG][IMG][IMG][IMG]

We had cassoulet last night. Made two, actually, with one going into the freezer for some time down the line.

I made ramen last night. Tonight it's more easy comfort food -- brie and prosciutto on grilled sourdough with apricot preserves and tomato soup.
