I love prunes but cooked carrots are one of the very few things left over from childhood I cannot make myself eat. OK raw or crisp in a stir fry, but tzimmes (which my mom loves and made quite a bit when I was growing up) - I can't do it.

As an adult, I don't really love sweet/savory combos. So sweet potatoes with marshmallow topping I don't like, Moroccan tagines with meat....and cinnamon? Nope.....

Chicken run tonight. Costco members know what I mean. Got some beautiful young cilantro in the garden, and peppers are nice and also cheap now, so a tray of something Mexican style with the leftovers.

Tonight's gonna be ricotta gnocchi with a prosciutto-basil sauce. Charred garlic-rabe on the side.

They really were. Took her all day to cook.

Funny, my daughter has similar feelings about carrots, although more extreme extending to all carrot preparations. I think carrot cake is the only carrot she'll eat

We make a side dish with shredded carrots, eggs, brown sugar, butter, cinnamon for Christmas or Thanksgiving. Gotta dig that up and post.

Tonight I made pork tofu. Instead of sliced pork I opted for a lighter version and used ground pork.

The dish calls for garnishes of button mushrooms, sliced onions, bamboo shoots, and green onion cut into 2" strips. But I used the sliced onions and just added fresh choi sum, a vegetable similar to bok choy and has a buttery sweet taste.

Came out wonderful! As usual it all ended up in my wife and I stomachs before I realized I should have took a picture to share. :)

Left over green chili chicken Lololadas...(what hubs calls my enchaladas, as his family calls me lolo). I do them lasagna-style versus rolled. Light fry on corn tortillas, then layer with chicken, cheese, some cream cheese and green chili enchalad sauce.

My mom, b day was this weekend, and she wanted tacos (I fry them, no pre-baked shells, so a bit of a process) Spanish rice and enchaladas, so I was bad and used rotisserie chicken versus cooking my own, since I had two entrees. Won't do again. Mom and hubs loved them, but store-bought rotisserie chicken just tastes too plumped up to me anymore...i don't like the taste. Won't use in the future except to make stock with the bones.

But, other than not being happy using rotisserie chicken, everything was really good. Its autumn...almost chicken and dumplings time!

Tuesday night - sausage bake (focaccia, white beans, cherry tomatoes & sausage roasted together with a little oil & vinegar). Close to the last of my tomatoes, I picked on Sunday...

My wife has been trying some new dishes that are healthier. Many are good.

The one last night was an "enchilada" dish with ground beef and cheese substituting for the tortilla. That one got the double thumbs down--the dish was not good enough to make again based on how much we liked it, how many dishes had to be cleaned up, and how much time it took to make.

Win some, lose some...I am going to lose those leftovers somehow...

This was perhaps the most decadent thing I've ever made. My gnocchi is always very much on the rustica side but looks aren't everything, and they were perfect pillows after the boil. And a sauce of butter, cream, Parm-Regg, prosciutto and basil is hard to top. We will make it again ... as a side. lol I mean this stuff is 1% rich!!

I picked up two prepared chicken salads from our local H-E-B.bbq chicken salad and buffalo chicken salad. Both WONDERFUL

Also this Salsa is the best, julios - made in Del Rio. Contrary to what @ Ken2v says - made in Texas is better yum.
