Day Trip to Mesquite: Help me Fill in the Blanks?

Ok, so... I've got one full day with a car in Vegas and am thinking that will be a great opportunity to do a day trip somewhere. Mesquite has long been on my list of places to check out, and I think this will be the perfect opportunity to do so.

I have a fairly good idea of what my itinerary will consist of at a high level. Loosely, I'll be hitting the Virgin Valley Heritage Museum and dropping into each of the three casino resorts (Casablanca, Eureka, Virgin River) to check them out and perhaps put in a bit of play.

Overall timing will be arriving sometime in the late morning and driving back to Vegas around 7:00 pm or so, mainly for the sake of getting to enjoy the sunset over the desert scenery.

What I'm wondering is... are there any notable things to see/do that could easily be incorporated into this itinerary? I realize that a town of 22,000 people isn't going to be as exciting or as fully featured as somewhere like Las Vegas. But just figured I'd look for some inspiration.

Also haven't decided where I'll go to eat yet while in town. The options look a bit limited, but perhaps there are some hidden gems?

Any ideas/suggestions are greatly appreciated. Thanks in advance!

If you’re a golfer Wolf Creek. Otherwise not a lot I’ve seen. Casablanca is actually pretty fun I think
 
Wolf Creek is a unique course. But ofherwise, why not go imto Utah, and, if you dont want to make the trek to Zion or Bryce, Snow Canyon State Park in St George is worth a visit.

But really, the town isn't that big. The restaurant inside Eureka is decent though.

Your best bet of activities is probably to go a bit off the beaten path and explore some of the dirt roads, and take in nature.

I see the signs for the Camel Safari quite often, but never stopped in to do it.



If you're willing to take some unmaintained, and possibly washed out roads, send me a DM and I'll give you some coordinates for a great camping spot that has absolutely stunning views, overlooking a canyon. 4x4 not required, neither is camping. Just a quick drive away from Mesquite.
 
If you're willing to drive a little more than an hour further east, Hildale, Utah/Colorado City, Arizona are interesting. To be fair, those towns have changed quite a bit within the last several years but, for reasons which are readily apparently if you look online, it's a really bizarre place (though there is a new brewery there with good beer). Full disclosure, it's not super exciting if you're not into cults and strange human behavior, but if you are (I am lol), it's fascinating.
