I gather from what you say here, that they transitioned from allowing the bartenders to serve the "bar area" tables, to having dining room servers cover those tables forcing the bartenders to only serve guests at the bar?
Man, I hate these types of setups... and it's all built around the politics surrounding sections and tip-earning potential. Even though you're not locals to Vegas, you're still regular customers that know who they want to be served by... it's astounding that they wouldn't allow an exception for you to get what you want.
Glad to see another strong review of Redwood though. It's always been high on my list, and now it's higher.
Funny, this reminds me of a thing one of my server friends did on his Instagram for a while... he photographed empty plates as a rather "abstract" way of expressing how good a meal was, leaving a bit of mystery compared to photographing the original meal itself.
EAT is great though... Chef Nat is a true inspiration, I want to try all of her restaurants.

You are correct NFC. Service of the bar area is bartender—-outside bar is waitstaff.
