+1 for this. If I'm feeling frisky maybe some Swiss.

When I'm at a make you own omelet station in Vegas, I tell them to put in everything even the hot peppers.
At home I stick to the basic ham & cheese.

Sounds like my Calzone choice as well; but add pepperoni. :evillaugh

Cheese, sausage, ham and olives. If sausage isn't available I may get some bacon, but sausage is definitely preferred.

Mushrooms, cheddar, green peppers, onions, sometimes bacon. I will eat a spinachy omelet if I'm in the mood but I don't make them at home.

Usually Denver style - ham, cheddar, peppers and onions. Sometimes I'll do bacon, swiss and onion with a dollop of sour cream. I should note that I much prefer skillets to omelettes.

Rule #1 - If I put goat cheese in it, I'm not eating for the rest of the day.

Rule #2 - There can never be too many onions or too many meats.

Rule #3 - No, more than that. Of everything.

Rule #4 - Screw the omelette. I'm going for a full-fledged ome here!
