Setting Reservations--Suggestions for something new?

    So I'm heading to Vegas for three nights in April, staying at either Paris or Bally's.

    The first night I'm going to Joe's Stone Crab in Forum Shops, which I love and will probably be going with seafood.

    The second night I'm doing Gordon Ramsay Steak at Paris, which will clearly be focused around steak.

    So, I'm looking for suggestions for the third night and I'd really just like to get a great meal. I don't think I want to spend quite as much as I'm sure I will at Gordon Ramsay but it doesn't need to be cheap. Somewhere in the $30-$55 range before drinks and tip.

    So, I'm just looking for something that:

    1. Isn't a steak or seafood focused (I'm sure I'll get oysters at some point too)
    2. Is walkable from Paris
    3. Is delicious and memorable
    4. I've never been (which excludes Il Fornaio, Onda, Stack, Stripsteak, Gallagher's)

    So, any suggestions would be helpful...maybe something in Bellagio, Aria or Cosmo would be cool as I've never eaten in any of those venues, but I'm open to anything.

    I dined at the one in Chicago in November (I've been to the Vegas one multiple times as well), and it was maybe the best meal I've ever had.

    It was a work function so we had a private room...we got the cold shellfish tower with the stone crab. For my entree I got the Dover Sole special with brown butter and it was absolutely amazing. I just think Joe's is the best, and I can't wait to get out to the one in Vegas again.

    I think you would do well at Mesa Grill given your parameters...

    What are the signature dishes?

    Jasmine's at Bellagio or Javier's at Aria would be good choices.

    I really like Sensi in the Bellagio. Its a fusion menu. I have ate their multiple times and its been fantastic each time. I also like the ambiance in the restaurant, as you can see the various kitchens in action.

    I also second the Mesa Grill recommendation.

    Lastly, I have ate at Mon Ami Gabi in Paris multiple times and it's very good. Both the price and the quality are just a shade below Sensi and Mesa Grill though.

    Just checked out Sensi's menu, looks great. Deciding where to eat in Vegas is truly the best kind of problem to have.

    Keep the suggestions coming, really helpful so far!

    Plus 1 for Mesa Grill. We love the place. You can hardly go wrong. There's a blue corn "pancake" with duck appetizer that we like a lot. My mouth waters at the thought of the pumpkin soup. The entree menu changes a bit with the seasons, but the spice-rubbed pork tenderloin is good and I'm a fan of the chile relleno, too. And if you don't order a black widow mojito and/or cactus pear margarita you're just doing it wrong.
