We're already thinking of where we want to eat while we're in town, so I'm throwing this out there for suggestions so we can make reservations. Mostly because we're in a rut and really want to try a new place or two.

What would you recommend around the price range of $100 to $125 per person (before drinks and tip)? We like just about anything. Prix fixe menus are high on our list. Steak and French falls in the middle. Asian or Italian would be at the bottom. Places that haven't been around more than a few years might be good, too.

The overall goal will be to leave dinner saying, "Now THAT was a fabulous meal!" And....GO!

A nice steakhouse such as CUT, Prime, SW, or Craftsteak. There are others too.

    Le Cirque is good too.

Based on that criteria, a few thoughts:

Julian Serrano or Sage at Aria
Michael Mina or Prime at Bellagio
    Milos at Cosmo
    La Cave at Wynn
    Eiffel Tower Restaurant at Paris

American Fish (Michael Mina restaurant at Aria) also has a great tasting menu for under $100 which offers a huge amount of food

    My favorites:

    Julian Serrano's at Aria

SW Steakhouse at Wynn (although you said steak was in the middle.....they also have great chicken and fish dishes and a fabulous wine list)

LaCave at Wynn (great wine list and you can get a wine pairing with dinner)

    Sage

    or

Heritage Steak (which could top the $125 pp depending on appetizers, deserts, sides)

also, Eiffel Tower restaurant. The 7 course tasting menu is very good and falls in that range (or at least it used to)

Go to Picasso at Bellagio and get the degustation menu. Its world class dining at its finest with great atmosphere, food and service. Also for 125pp i think its one of the best values in the world for a top fine dining experience.

Gordon Ramsey Steak - Best dining experience for me in Vegas. I've made reservations for my May trip already.

    Hugo's Cellar and Andiamo's

The special places I like are downtown... Hugo's Cellar at Four Queens... wonderful cuisine at reasonable prices. And for a new place to dine... Andiamo's at The D has a varied menu and is excellent. Both places have menus on line if you like to look at them. Prices are listed on Hugo's menu and after looking at Andiamo's Las Vegas menu... I looked at the Detroit Andiamos to get the prices... they are the same as the Las Vegas site. I get a buzz just looking at all the different options at either place. "Yelp" and "Trip Advisor" have reviews and some pictures of food at both places.

Bobby Flay's MESA Grill at Caesars was amazing this weekend...

We also hit up GR Steak @ the Paris (for the 2nd time) this past week...I'm 1 for 2, our meal wasn't that good there...everything was over seasoned!

We have also ate at the Eiffel Tower restaurant before, not as good as MESA, but more expensive :)

Tell us some places you have liked in the past. And those that have you in a rut. That helps folks branch out from there.

By the way, lots of good advice already.

    Fogo De Chao on Flamingo.

Not up to your $125 cost (about $50) but unlimited filet mignon (among other things).
