Agree with Mandarin Oriental. Also, Bar Moderne at Aria has very decent cocktails, if you'd like a livelier vibe and video poker.

I know people are going to recommend Cosmopolitan, but though I might just have bad luck when it comes to their bartenders, I find their drinks generally unimpressive.

I completely agree with Petrossian. Hyde, however, very much depends on when you're there; especially as it gets closer to "nightclub" hours, I've found the bartenders completely uninterested in making anything with more than two ingredients. I'd substitute Lily, which has great cocktails and generally better service (unless you're specifically looking for the dance club vibe of Hyde).

    Cosmo

No doubt the Cosmo. Play some bar top VP at the Bond lounge. They make awsome high end drinks.

For craft cocktails - Sage (aria), American Fish (aria) and Vesper (Cosmopolitan).

For views - Lobby lounge at Mandarin Oriental

Was at both Vesper and Chandelier a few days ago. Great drinks and atmosphere.

Vesper is terrific -- great people watching at all hours. Chandelier is beautiful, on both levels. I also like City Bar at Aria because of its central location; it makes for great people-watching. Just depends on what kind of atmosphere you want. Hyde at Bellagio can be great -- but agree once you get to club hours, you get club scene. All in what you wish!
