I keep running into the same problem. All the good steakhouses that I usually frequent offer a last seating of around 1030pm or so. The issue is, I have been taking late flights and don't arrive before 11pm. What late night dining options are available? I am not talking Earl of sandwich or Panda Express. If I want a porterhouse and seafood tower at midnight, where can I get one?
What fine dining spots are open late? I am speaking strictly in terms of weekends.

there really is no true fine dining open that late. but you can get a good meal at Wolfgang's at MGM and it's open all night.

We have a similar problem in that the wife and I like to eat a late dinner after shows. Although not a true steakhouse, we have a reservation at Fix in Bellagio for 11:30PM after the Jimmy Buffett concert this coming Saturday. That was as late as they would take a reservation, but still may not work for you.

That may work! Never been to Fix. Thanks.

Allegro, at Wynn, has a late-night menu (they're open until 6am or so). I have a feeling it might be a bit of a raucous scene at that hour, though.

Allegro is a good choice. In addition to Fix, you should be able to secure late reservations at Stack at Mirage or N9Ne at Palms. Grand Lux, The Henry and Sugar Factory are good 24 hour options.

Allegro is the wrong end for me being at the MGM usually but Ive heard good things and want to try there. Ive gotten a couple good meals around 1am at Wolfgangs as mentioned. I wish there was fine dining or just a decent number of restaurants open at least to midnight - room service I guess?

Though it doesn't help you for the time being, Hakkasan should be open at MGM Grand in the spring (last I read was late April), and based on the hours at their other locations, that may be the sort of place that's open pretty late.

I know I can get a decent "meal" at that hour, somewhere. However, with all the great restaurants in town I hate to put any sub-par food in my stomach.
I'm a weekend visitor and certainly a foodie, I get two dinners at most when I am in town. I rarely eat breakfast or lunch. So that dinner is key as it's my arrival dinner. I know someone must have a some spots we are not aware are open late.

For the list, Javiers at Aria is open till 2am I believe. Actually had a great steak there and margaritas are solid, However, its still not the Vegas powerhouse restaurant experience I am seeking.

Your expensive palate I don't think is going to work at the hour you are talking about. Most of your $$$$ restaurants are closed at that hour in fact most of them close between 10:30 p.m. to 11:0 p.m.. I usually do Wolfgang's at MGM at that hour. If you find one let all of us know because I would be interested in which one is open after 11:00 p.m. in the MGM area.

    Probably no luck there.

"What fine dining spots are open late?"
Off Strip is your best bet. For example, Raku is open until 3 am. It serves Japanese cuisine (specializing in robatayaki), and is on my top 10 list. It's a place other chefs visit. Reservations are a must during earlier hours; I don't know about after midnight.

Whatever they're calling the former Stratta at Wynn these days [I know I got a decent steak there late night once, though if it's still on the menu anymore I don't know]

    Also possibly:

    Botero at Encore
    Lavo at Palazzo
    Tao at Venetian

Other than that, best room service bets to get a good quality late-night meal are probably Wynncore or Caesars Palace - IMO they have the most extensive room service menus in town.

Blue Ribbon in Cosmo may be a good bet. The ones in NYC are known for being great spots for late-night dining.

Rib Eye at Stratta at the Wynn. Open until 5:30am.

Decent steak, but it's deliciousness increases depending on level of drunkeness.

Try Smith and Wollenskys (on the strip between MGM and wallgreens). I know they are open later than most casino steakhouses... I've gone there after 11pm before. Their shellfish tower is excellent and dry age their steaks in house. I usually get the bone in ribeye and the truffled mac and cheese is awesome. Gonna have to try their t-bone one of these days.
