What to make for dinner 2021+

    So, I got up early and headed out on the bike. First were returns to Lowes and Home Depot, then off to the Asian Seafood market to get stuff for my lunch.
    Here are the victims:

    I did the crab first, when I went to do the crayfish, I found that one has "escaped"

    Sunday dinner spoken for this week but, this looks like an option for next week!

    spatchcocked two chickens with intent of slow cooking over coals with mesquite chips thrown in to add to simple salt and pepper seasoning. Looked like the heavens were going to open up so we hedged and put one on coals and one on gas.

    After firing up everything and placing the chicken inside down I went for my shower and left my “sous chef” in charge.

    after the shower I asked how things were coming and was told one on coals almost ready to flip. How about gas bbq? Oh oh. I quickly noticed a bit of smoke opened the lid and perfect golden brown butterflied chicken! Other side was slightly charred but fine. We took the 20 minute chicken off the grill, quartered it and yummy!

    chicken on coals done after we ate. It smelled nice but, it will left overs for tomorrow

    Do you hang that from a tripod? Looks gorgeous!

    I ate too quickly tonight ;-) Grilled bone-in pork chops, grilled zucchini, and quinoa.

    tripod, yes. Doesn’t really make a difference over coals but want to try it over wood. Only issue is our fire pit has burned so many carcinogenic items, I’m afraid to cook anything until dig out a couple feet of ashes!

    I did bbq chops night before but they came out blandish. Not enough sauce I think:(

    Our firepit is ginormous - we love to cook on it, hubs made a grill for it. And we've cooked in the coals, and we've planked salmon on wood like we saw at German Christmas markets. Would LOVE a tripod but would need to be soooooo big ;-) We watch Taste of History on PBS and love all the foods and fires Chef Shaub cooks!

    Yep, it's the biggest Weber Smokey Mountain 22. Haha I can cook 60 lbs of pork butts on it and do every 4th of July.

    The trick is building your fire right. I fill the ring up with enough to last 6 hours for ribs. I can make one that will hold steady for 12 hours, but that is for a different day lol. Then I'll take out two handfuls of the briquettes near the vent into the wind to light. On the bed of charcoal, I make "hickory bombs" and place them to where one will light when the other is going out. 3 bombs for 3 hours of smoke. After 1.5 hours, I will spritz them with some apple cider vinegar every 30 minutes. At hour 3, I wrap them in butcher paper for 1.5 hours. Some people use foil, but butcher paper gives you a better bark I think. At 4.5 hours, I remove from the paper and slather on some sauce. At 25 minutes, I sauce them again and leave them on for a total of 45 minutes.

    We're not foodies. Father's Day dinner yesterday was leftover cocktail meatballs and potato salad from a couple of days ago. My wife's approving comment on taking her first bite, "Could be worse."

    I'm not sure which model I have actually, but think it's the one larger than that? But it gets some use. It's not a day to day for us, but once or twice a month or so we'll break it out. There are a few things we've found it does well (chili, arroz con pollo). Really up to you how often you might use it, but even after the "new toy" gimic ended, it still gets some use.

    Hope I can say the same for the hydroponic herb garden I just bought from Prime Days. I really need to stay off Amazon today and tomorrow.

    Edit: Sorry, you asked for some recipes. I don't follow these exactly, but I never really do. Also, for things that suggest sauteing in the pot itself, I still do that over a pan and then transfer. I just find it awkward to try to saute in the instant pot, but that's probably just me

    Lemon Garlic Chicken (this is probably my favorite recipe for the pot I've found)
