    Killer. We have chimi and aioli left so that's going on salmon tonight. We also have a wad of tomatoes so will make pomodoro sauce for later this week.

    Inspired by this thread my take on a deep dish pizza, but with a second layer of crust on top. Turned out really well, the family loved it

    I had to look up pomodoro sauce to see what it was, I must have led a sheltered life. I've got a boat-load of tomatoes coming ripe in the next few weeks. It's on. Thanks!

    OK, for dinner tonight, I cooked haam yue jing jue yook (salted fish with ground pork) When I buy ground pork to make Won Ton, I buy a lb., and use 1/2 lb. for a batch of won ton, usually, I make this with the second batch.

    I found a recipe on line and the Romanicized spelling was "Hom Yu Jing Jiu Yok Bang", probably a different dialect than my father's side spoke. It is translated as "steamed pork cake".

    Here is the dish before I add the haam yue. A ring of ginger surrounds the haam yue

    Steam to 10-15 minutes. Here is the finished product,

    Serve with rice. It is not an entree, but a dish served family style.

    Not found in many cookbooks, and only served in restaurants that serve Cantonese "peasant food".

    Wow!! You're overpaying. It's $2.19/lb. at most Chinese grocery stores in California.

    Chicken Enchiladas. Mostly leftover chicken and black beans. I found a recipe for enchilada gravy (sauce) that is really good. I'll top it off with some El Yucateco habanero sauce on mine since DW doesn't like anything spicier than oatmeal.

    Not too far off from how we make it. Though sometimes I'll rehydrate dried chiles instead of using pure ground chile. Cumin. Hint of Mexican oregano. Fresh garlic. And occasionally a square of chocolate. I'll vary beef and chicken stock depending on end usage.

    Tenderloin tips, quartered baby Dutch yellow potatoes, mushrooms and snow peas. Add a little olive oil, pepper & stir fry sauce and it works out pretty well. The requisite fruit salad should last me another day. (notice the Venetian spoon rest? :woohoo:) I probably have this exact same dinner at least 100 nights per year.     I have a spatchcocked chicken sitting in the fridge swimming in lemon, olive oil, garlic and rosemary. I'll chuck that on a plancha on the grill. Polenta. Calabacitas.

    Polenta out. Farro pilaf in.

    Jerk chicken thighs. I misjudged the heat of the jerk marinade with 4 ghost peppers and 1 carolina reaper frozen last year and got hiccups after one bite but the endorphins are starting to kick in so I'll be OK. Fresh picked sweet corn from our friends and our just (almost) ripe tomatoes on the side. I could eat like this every day. Can't wait till the scotch bonnet peppers get ripe.
