Hmmm, what to make for dinner?

    Last night was a simple one dish meal mapo tofu, done Hainanese style
    A "one dish meal" if you don't count the rice.

    Simple ingredients
    garlic
    ginger
    Doubanjiang (red chili bean paste)

    ground meat (I am making it with ground beef, but most restaurants serve it with ground pork)
    salted black beans
    green onions
    tofu (of course)
    If you like the Hainanese (Chinese) way, I would refer you to Adam Liaw's recipe


    If you like the Korean way, which can be much spicier, I would refer you to Maangchi

    We made lasagnas on Sunday and of course yesterday was baby backs, baked pinquito beans, potato salad and corn.

    Yesterday's lunch was Garlic Chicken stiuffed crust pizza from Papa Murphy's I told my son that he could order it in the future, but it wasn't a favorite of mine. Their white sauce wasn't creamy enough and was bland.

    Today . . . Boring old Kkhanpungi. I'm getting a little better with the presentation, and next time I may try it with shrimp instead of chicken

    I had to look this one up. Sounds intriguing! I'll try to make this one day. Found a lot of recipes and watched one video of a pretty lady making it. At the end she and her cute little son chowed down on it. It looked delicious!!

    For our Albondigas soup, it is really almost like a stew. We use rice in the meatballs, and add Yuca (casava), potatoes, carrots, celery. Serve over white rice, add a pico de gallo mix that includes cilantro as a topping. Really good.

    Haven’t had mussels in a very long time... and I cannot stand frozen mussels which come in smaller portions than a whole bag of fresh mussels. So I did up a whole bag of fresh mussels for myself, with some linguini tonight! Plating this cleanly wasn’t an easy task.

    Finished off with a godfather. That’s a great after-dinner drink.

    Wow, looking good, you can't beat PEI Mussels, forget the frozen kind. I found this recipe awhile ago, just haven't made it yet Steamed Mussels in Coconut Milk and Thai Chiles.

    As for Godfathers, one of my rotating cocktails while playing VP, my last one was at the Eden Lounge at Harrah's AC.

    So, today for lunch I made Maangchi's "Kimchijeon" or Kimchi pancake.

    I know that there are more than a few Korean chefs on YouTube (or elsewhere for that matter). I have gravitated to Maangchi because the dishes she cooks are:
    1)quick and easy
    2)She explains in her video what and how she is performing an operation
    3)So far, her recipes have all turned out well.

    On this Kimchijeon recipe, Maangchi has a recipe, but Seonkyoung Longest also has a recipe. I chose Maangchi's recipe because her video was 5 minutes shorter than Seonkyong's. Seonkyoung tends to stretch her videos out, being cutsey and what-not. Maangchi does the same but I guess she has more practice at it.
    Anyway, this is Maangchi's recipe.



    I used store bought bottled Kimchi. The next time I will use store bought (but not bottled kimchi), or make it myself.

    So, everything went swimmingly well until it came time to flip the pancake. I did it over the sink to avoid any major accidents. Well, it flipped, but only half of it flipped. Half of it flipped on top of the other half.
    It may have been one or two issues
    1)too much water. Her printed recipe says 1/4 cup, but her video says 1/2 cup
    2)not enough practice in flipping things out of a 12" pan
    3)spatula not large enough
    So, I'm thinking, there's gotta be a way to get this flipped cleanly.
    Then, I figured it out. Using two dinner plates, I slid the first side out of the pan onto the plate. I placed a second plate on top of the pancake and flipped it over.

    I then took the time to put addl. oil into the pan before returning the flipped pancake back into the pan.

    This will all be moot once I get the hang of flipping it in the pan, but then again, I'm probably not going to make enough kimchi pancakes to get enough practice.
    Anyway, here the finished product.

    I thought it was "OK", but note that Maangchi used whole leaf, homemade kimchi, so it was easier for her to get a whole 2 tbsp of kimchi brine. I had to struggle to get 1/2 tbsp, which probably caused the flavor to be less "rich" She's also had a lot more practice at flipping kimchi pancakes
    I will try Seonkyoung Longest's menu next time and report back.

    Managed to hit a “fancier” grocery store earlier this week, and took that opportunity to get some nicer eats.

    That’s a tenderloin steak with red wine/balsamic sauce, a 5oz lobster tail with lemon/garlic butter, and some more of that mashed cauliflower.

    Grilling skewers of chicken, prosciutto and bread, tossed in thyme, rosemary, garlic and lemon. Arugula and heirloom tomato salad. We'll toss back a few cocktails and pull a Syrah or Merlot. Happy weekend all.
