    Gonna be "junk pot" later this week. We liberated a number of proteins from the cryocrypt. That means one thing ... gumbo is coming up.

    Tonight: dogs and beans and potato chips. Yep, that is my Fat Tuesday meal! Too many things going on with the children, work and wife, thus the easy meal.

    Nice! I love pancakes, but, it all too often becomes a meal my wife fixes once a week. I love pancakes (we have real Vermont syrup, too) and bacon. I love my wife. However, breakfast for dinner once a week becomes tiresome. Do enjoy, though.

    I grew up eating pancakes on Shrove Tuesday, but as I'm no longer Christian, I don't pay attention to the church calendar and forget. Wouldn't mind pancakes for dinner once a year ;-) (though I don't like syrup, so I eat pancakes plain - I prefer bacon & cheese waffles ;-)

    So, I learned something today. Have never heard of Shrove Tuesday. As you saw, I made hot dogs, pork and beans, and potato chips. Maybe I should have had the wife make those pancakes (not sure if the bacon is legal, or not). We tend to split up the cooking, and, unfortunately, I get Fridays. No meat on Fridays is hard for me. Means a lot of pasta (without bolognese sauce), and fish with fries, or such. I am a Christian, but my wife is Catholic. I try to support her by abstaining from the meat on Fridays. Time to pull out the Lent cookbook. Cheers.

    We're big fans of breakfast for dinner. Of course, between cold pizza and leftover enchiladas I do plenty of dinner for breakfast, too.

    My sister is not an adventurous eater or cook. The first year she was living with her husband, he went vegetarian for Lent and she was so distraught - she could do meat & potatoes, HOW could she feed both of them? Well, she didn't ;-) I think he made most of his own food and she did her own too.

    Tonight it's spicy turkey and green bean stir-fry. It's mindlessly easy. Char the beans, brown the ground turkey and chuck in some sambal and what not, the finished beans, serve over basmati or black rice.

    I like dishes with green beans stir fry. I can eat fresh green beans stir fried just by itself, although some restaurants make some awesome dishes just with stir fried green beans.

    I try to make it at home, not sure if my stove doesn't get hot enough but I suck at it. I eat them anyway. I love fresh green beans.

    Last night was turkey meatloaf and mashed potatoes. tonight is local Mexican joint ( every Monday)

    La Cocina. Couple locations near us. This is the budget place. The nicer / more expensive / executive chef / quality place is Sabor. Sabor is every Friday, lol. We are creatures of habit

    Sunday night I made corned beef point with cabbage. I used the Instant Pot. Wow, the corned beef came out so tender and soft, you can cut it with a fork.

    The cabbage, potatoes, and carrots however came out overcooked. The cabbage and potatoes had a texture of mashed potatoes, lol! and the carrots looked like baby food.

    Just need to tweak when I put in the veggies and it'll be fine. I love playing around with the Instant Pot.

    So last night was left-over night and I steamed some cabbage, potatoes, and carrots to my liking and had some leftover corned beef again. Sooooo delicious!!

    I just an article that said the price of lobster has plummeted because of the virus affecting the market in China. I think I will go out and see if I can find some cheap lobster.

    Last night we had ancho-pecan pork tacos and we also made a vat of black beans. We had crema left over from a few nights ago so didn't do our usual kicked-up guac.
