This is TOW, its even a rotating restaurant, as long there's good visibility its an unforgettable experience.

Maybe I missed it, but it appears you are flying from Europe for only two nights in Las Vegas? If that's the case, don't bother going anyplace fancy, since one or both of you will be half asleep throughout the whole meal. Two nights is too short a time to come from California, let alone the Netherlands. Tables for two at the Eiffel Tower restaurant face the fountains and are very romantic. (You can see the fountains, but you can't hear the music.) I agree with most of the prior suggestions on food. If you just want a steak and she wants chicken, there are literally thousands of choices.

I didn’t get to do anything special this time around

if I had I’d have loved to do Morimoto or Joel Robuchon, or Bazaar Meat.

SW if a steakhouse is on your mind.

Or you can look to the fancier tasting menu style places (Robuchon, Cirque, Guy Savoy), but I have not been so can't advise what would be best.

We did the tasting menu at Eiffel Tower Restaurant. We opted to not do the wine pairing. Instead, we got a red and white by the glass. It was wonderful and came to about $475 for the two of us, including a generous tip to the wonderful Maria, who took such good care of us that night and made sure that the meal and the table blew my mom's socks off. :)

The Sweetie and I had an amazing dinner at Le Cirque in Bellagio. Every course delicious, perfect service, quiet enough for deep conversation and view of the Bellagio fountains. A lovely memorable experience.

That's how I remember Le Cirque being. Definitely a more intimate setting than some of the larger "fancy" restaurants, and it's not too far away from Planet Hollywood.

It's got a great view of the Strip and Bellagio Fountains. Our photo wasn't great because of the sun setting behind Bellagio, but here is the whole report about our tasting menu. https://www.vegasmessageboard.com/forums/index.php?posts/1610048/

I've got a better picture on my phone I'll edit in here in a minute. :)

This is table 56 ("borrowed" from VitalVegas). We were two tables to the left.

Since you said money is no issue I'd go with Joël Robuchon. Very intimate setting! Food alone will run 150-400 per person depending on what you choose.

If you have a FB, there is a recent review of é on the 'Solo Las Vegas' page (with pictures).

Think the chap took a picture of all 23 courses :D

It also depends on what type of food you love.

A few ideas near-ish to you:

    Prime at Bellagio (Steakhouse)
Mastro's City Center (seafood & steak focused)
Morimoto @ MGM (Steak, sushi, Asian fusion)
NOBU @ Caesar's (sushi with some other options too)
    Joel Robuchon @ MGM (French)
Koi @ PH (sushi, surf & turf, etc.)

There's Strip House at PH, too, but if you're feeling steak I'd cross the street for Mastro's or Prime because Strip House can be loud.
