    I got a santa maria style Tri Tip roast I'm going to dry brine in the fridge for a little while. Then she's going over to an open pit of oak lump charcoal to roast. Drinking beers from a to b. The salt looks heavy but it's not. It would be really salty if you used normal or coarse kosher sea salt. Have to dial it back a little. Nice fat chunks of salt roasting away on the grill ❤ if anyone is wondering, that is a brand of korean pickling salt. Extra coarse. Perfect for any beef. 20200115_153313.jpg

    Went to a local German restaurant for our anniversary- I got the Jaeger Schnitzel (my favorite) my husband got the Holstein Schnitzel- same as mine but came with 2 fried eggs on top. He got beer I got a peach margarita. $72 with tip. Hubs said as we drove away - dang those are vegas prices.

    #39 figured one of us would have killed the other by now ---- just kidding. Technically it's not until tomorrow. Someone forgot to ask for the night off (me). Luckily we are both not into celebrating birthdays etc. The only reason my husband remembers our anniversary is because it was exactly one week after he graduated from Marine Corps Boot Camp -- that is the date he can remember and just adds a week.

    The Jaeger Schnitzel is the bomb. Oh forgot the pumpernickel bread. hmmm

    In Charlotte for work tonight, so a little bbq at Midwood smokehouse

    Fatty brisket, bacon wrapped jalapeños, hush puppies, ridiculously tasty burnt ends in a cherry cola sauce (it’s pig candy) and some great spicy pickles on the side.

    Ok. I said a little bbq. Actually a whole crapload of bbq.
