I think to meet this requirement it has to be one of the best things you have ever eaten. Something you crave and would go out of your way for (price, wait, etc.).

For me in Vegas that is:

    - Sticky Toffee Pudding at GR Steak/HK.
It is quite simply one of the tastiest most decadent desserts I have ever had. I’d consider going to the bar and just ordering that.

    - Bone in Ribeye at Bavette’s.
It is so perfectly cooked and crusted. It is one of the most perfect steaks I have ever had.

    - Crack Pie/ Crack Pie Milkquake at Milk Bar.
The buttery brown sugar goodness of the crack pie is truly special. I have ordered hard to find ingredients and spent hours recreating the recipe.

    - Red Velvet Pancakes at Aria.
I love Nutella. I love pancakes. I love Red Velvet. These are special.

Canelones Tradicionales De Cerdo Y Hígado De Pato Con Salsa Bechamel from Jaleo. Sadly they haven't been on the menu for about four years.

If we're including dishes no longer available, then sign me up for the salmon at Seablue and the rapsberry tuna skewers at Julian Serrano

Mine is gone. I ADORED the beef carpaccio at Olives. I'm still sad, as it was a total "I can only get that in Vegas" love dish.

But, we want to try Giordanos stuffed pizza, as it looks amazing, so maybe I'll have a new love!

Holsteins is still on the love list, the fun-ghi is one of my favorite all-time burgers

There is one meal that I make sure to enjoy every time I visit Las Vegas:

The 777 Brewpub at MSS serves a meatloaf dinner beginning at 4 p.m. daily. The meatloaf itself is very high quality, and it is covered with a delicious brown mushroom gravy. It is accompanied by a loaded baked potato and a grilled vegetable (often broccoli).

The service is always good. It is brought out quickly and hot. And since I just drink water with it, the price is low at about $10 + tip.

I tried the Main Street 777 pub meatloaf last trip as my girlfriend raves about it
It was good and cheap. I could have split it with someone it looked like a pound of hamburger and I got mashed instead of baked potato still couldn’t eat half.
However she ate all hers with a baked potato

I know it's a chain, but my OH loves the Jerk shrimp appetizer at Bahama Breeze. He has it at least once every trip.

Are you talking about that tapioca salmon thing? Damn I miss that. I had it at Borgata, too, way back when it first open.

And I hadn't realized they'd taken the raspberry tuna off the menu at JS, but man, those were good.

That was it. Seablue was my favorite Vegas restaurant for years. I still miss it.

Unfortunately, JS took the skewers off the menu a few years ago. I gave one of the employees I am friendly with a hard time because they continued to show the skewers on their advertising on the Aria/Bellagio tram for something like a year after the restaurant no longer offered them. A lunch shift manager finally told me that the skewers were one of the more labor intensive items on the menu to prepare and that's why they got rid of them.

I totally did not realize this. I usually do the tuna cones and the huevos estrellados.

As an aside, I completely am in favor of saying something to the staff, because if nobody says anything, nothing changes. Herringbone took the tuna steak sandwich off the lunch menu a couple years ago; it came back (I think within the last year) because, according to one of the managers, people kept saying how much they missed it. I wouldn't call it "complaining", but honestly, there's a real benefit to letting management know if they got rid of a dish that you like. If they're remotely interested in their job, they should appreciate constructive feedback.

Ohhh, almost forgot. The bacon mac+cheese at Gallagher's at NYNY. I know it sounds trivial, but it is YUMMY! :)

And, I do not remember this dish from the original restaurant in Manhattan the last time I was there. It's either new or unique to the LV location.
