As I was reading DaiLun's TR, he had mentioned the Bone-in filet was a dish to "die for"...so it got me thinking, what would your "to die for" dish be in Vegas?

Tough to narrow down but I did my best to limit to 3:

    The pork buns At Momofuku
The Dan dan noodles at China poblano
The fried chicken skins at Carson kitchen

Two honorable mentions for the iberico ribs at Julien Serrano and the wagyu gyoza at sushisamba.

Combo pan roast at Palace Station's Oyster Bar. I've waited in line for two hours to have it and would happily do so again.

Osso buco at Piero's Italian. Unreal.

Also, there's just something about the tzatziki at Milos at Cosmo. I'm contemplating a late October and/or January trip to Vegas... and my planning notes for each potential trip have Milos as my #1 stop to have exactly this.

    I'd make a terrible vegan:
Certified Kobe; Jean George, Prime or SLS (Wynn, Palms and other places serve it but I've only had it at the three listed)
F1 Waygu; Jean George (best NON-Kobe steak I've ever had)
Foie Gras Cotton Candy at Baazar Meats; SLS
Carb legs (can add other items) in a bag with "The Whole Sha-Bang" mix of spicy butter garlic sauce. After Kobe, this is the best thing I've ever eaten and there are multiple restaurants in Vegas that serve this; in Vegas I have only tried this at the Boiling Crab which is just west of The Palms (I've been to many other restaurants that serve this outside of NV)

I die a lot when I'm in Vegas. There are so much wonderful food choices.

Right now the surf and turf (Ribeye med rare with king crab legs) at the Redwood Grille comes to mind.
