    Crockpot night. Putting a meatloaf on before I hit the sack. And when I get up it will be done. Also going to make beer bread to go with it.

    I made 2 trays of lasagna yesterday with garlic bread ( made all homemade of course ) can’t do frozen anything and it was delicious. Made a white almond cake for dessert. I forgot photos, but when my mom or someone gets a piece for lunch cut I’ll get one. Tonight my daughter requested Tuna Noodle Casserole. I know, I know, but I make it special. It’s not your everyday Tuna Noodle Casserole and it’s really good. Part of the sauce is I melt butter and cream cheese and cheddar cheese, sautéed mushrooms and onions, and heavy cream as a sauce base. Then I use pasta such as penne or cavatappi and about 3 pounds of tuna lol. Stir in some peas. I’ll post a photo when it’s done too. For Tuna Noodle Casserole it’s really good, I promise ;) Comfort food and my 10 year old princess insists I make it tonight. Lol

    Tonight I'm thinking of throwing fresh oysters on a hot charcoal grill garnished with grated daikon radish and Korean ko chu jung sauce. Also several whole Dungeness crabs in the steamer with butter and red potatoes.

    Yep. I'm on the path of contracting gout. But it's my Birthday today!:evillaugh:

    Hope you had a fabulous day @Electroguy563 and Happy Belated Birthday! I completely forgot photos of all the food I cooked. I just made us a healthy snack for the football game though so I’ll post it. Just a simple Caprese Salad. Fresh tomatoes and basil leaves, soft mozzarella drizzled with light olive oil and balsamic vinegar. Mmmmm yummy and not too bad for you. [​IMG]

    Polish Day... Kielbasa(not brand name..the real stuff), golombki which i made, pierogis made by the Polish church ladies, boiled potatoes with butter ,parsley S&P, and real rye bread..seeded of course... to was it down. Pivo(that's beer)

    meanwhile, my wife made up a double batch of beef stew in the crockpot for Monday...didn't cook it as the meat is better as it marinates in the pot overnight

    It was holiday and projects-around-the-casa weekend, so we kept it simple. I made miso ramen on Saturday and yesterday was black-bean chili, cornbread and brownies. We also experimented Saturday morn with some options for brunch when the famn damily is here next month. Tonight it is "farrotto" -- yes, it is that time to play with ancient grains -- and salmon. Gotta see what the farmstand has for veggies today.

    On December 10th, I will be making a memorial dinner for my Dad who passed away last year.

    I will make 3 of his favorite dishes

    Steamed Bass with black bean sauce
    Spinach with "foo yue" (fermented bean curd)
    Roast Duck
    Steamed rice

    Of course, my son doesn't eat any of those things, so it'll be just me eating

    Tonight was beef dip and cole slaw. Neither of us felt like cooking.

    Store bought buns, sliced deli meat roast beef, packaged au jus, bag of coleslaw and we're good to go.

    Attempting to recreate the Colonels 11 Herb & Spices Fried chicken tonight. I have 4 large split breasts and about 15 chicken legs ( everyone’s favorite pieces) soaking in buttermilk and egg mixture to brine. Then right before I’m ready to cook it I take it out of buttermilk and let the excess drip off. Then I roll it in a flour mixture with the following already incorporated into the flour....ground mustard, ground ginger, black pepper, white pepper, garlic salt, celery salt, basil, oregano, thyme, paprika, and of course Accent as it’s not KFC without the MSG! Bwahaha! Then fry in vegetable oil preheated to 325-350 degrees in my large stainless steel electric skillet. I’ll post photos of it as I prepare it in case anyone would like to try the recipe. Hopefully it is good! [​IMG][​IMG]

    I hope his faves, your hand at it and your remembrances make the 10th the bright, memorable day it should be. And bright can -- and should -- have some tears, for tears only exist in the path of love and joy. We were there recently for my mom's first -- and for her, Mexican figured front and center.
