Loving all the suggestions. Will read more about all of them and then decide. Might have to do a couple!

Smith and Wollensky has been closed since May, and they're looking for a new location. I don't know when it will reopen, but it is a great steak place. I've been there a few times both in LV and in NY.

The your occasion and with the wife I recommend:
    1) Mizumi (Wynn), let them know the reason for going out and ask for a window table.
    2) Top of the World (Stratosphere ) expensive and food not Michelin Star worthy, but at night this place is magical, wife will never forget it.
    3) Jasmine (Bellagio) amazing service, right next to the Bellagio fountain. Beautiful decor.
    4) Lago (Bellagio) only if the weather is good and you can sit on the outside patio

Steakhouses are usually not the best for anniversaries IMHO, but as mentioned elsewhere, Cut is probably your best 'romantic' one.

I second Top of the World at The Stratosphere. Had our 25th anniversary dinner there and filet was terrific and the view stunning.

we love charlie palmer in the four seasons and the 3 course price fix cut of the week menu with unlimited wine pairings for $ 58 per person is one of the best meals in town. you will spend $150 for two with a very good tip and will then be able to indulge yourself in perhaps an excellent brunch at the wynn. so i agree with ken2v as well, alize is fantastic, great view but very expensive. charlie palmer has no view but an excellent dining room with an outstanding wait staff

Joes in Caesars is our favourite. Classy, elegant, old school. Steak is amazing. Service is exceptional

If dining at Alize, I suggest making a reservation for 30 minutes before sunset (if possible for the time of year)and requesting a window seat. You get to see the lights on the Strip come on as the sun sets-very romantic and the food is very good. I got bonus points when I did this for my wife's 40th birthday.
