Well, it all depends on whether you're being comped or paying out of pocket. You also didn't specify what games you like to play.

Best place to gamble - wherever you feel lucky. If "eye candy" is your thing, the D and Golden Gate have very good party pits at night.
Best seafood buffet - not much downtown specifically for seafood. You may need to go up to the strip, I highly recommend the seafood buffet at the Rio. It's expensive $50+ but well worth it. Check out my review in the restaurant section.
Best Steakhouse - I have eaten at Andiamo's at the D about 8 times and never had a bad meal. I have also heard that Hugo's Cellar at QQQQ is excellent but more of a "date place".
Unique LV gaming experience - Silver Strikes at the Four Queens - a note (if there aren't and red caps or blue caps in the strike turrets, just play to get one clear cap, since they are only silver plated)

Not a real "secret," but Sigma Derby upstairs at the D is a really fun and inexpensive way to spend an hour or so. Drink service is good there also....

Best BJ downtown is at El Cortez.
Triple George, across from DTG, is a very good and reasonably priced restaurant.
777 at MSS has really good bar food. Their buffet is also a good value.

These aren't really secrets but they may enhance your trip. Have a good time and let us know how it goes!!

For eats I recommend Pizza Rock and Andiamos. For gambling the D, Golden Gate or El Cortez is where I spend most of my time.

Most places downtown are great to gamble at. My last 4 or 5 trips i have stayed at the $ Queens and Main St station. I have played BJ at the El Cortez, Main St, Binions and Four Queens. For Video Poker I mostly play at Main St Station and 4 Queens since they have 9/6 JOB games. I also play at the Fremont since they have Pickem poker. For variety I also play at The downtown Grand nice bar and the El Cortez.
My favorite place for breakfast is Magnolia's in the 4 Queens. I also go at least once a trip to Market St Cafe at the California hotel and have the Prime Rib dinner with the salad bar. Market St, also has a late night menu. You can't go wrong with the happy hour menu at Triple 7 brewpub. If you walk over to Fremont St E area around the El Cortez there are lots of new places with great reviews that I have been meaning to try out.
If you like old Vegas type of lounges, there is a small one at El Cortez with a jazz group or an Elvis singer there at night.

Binions BBQ is a hidden gem as mentioned. There also is/was the best video blackjack game there on the far right (3:2 surrender, one deck DAS, any denomination) please dont hog it if you go though :'(

My favorite "secret" is the $2 ATM, way better than the $8+ the casino ATM's charge.

Chicago brew pub at the 4Q. it is a very nice little hidden gem. good pizza and beer at a fair price. ELCO has some of the best low minimum BJ rules. the Fremont offers the most "free" unlimited, more than you can handle second-hand smoke.

That is the BEST place to drink for the least cash outlay in all of Las Vegas. A couple of quarters every few minutes is all it takes. Last time I was there they were coming around for drinks faster than I could finish them, really!

Every flight, at airports within 4 hours of me, has been cancelled due to snow storm. Hopefully you aren't from the east!
