Do any Vegas games reward -- for lack of a better word -- nerdy skills?

It sure seems like this is extremely rare these days. I will, occasionally, run into a dealer with bad habits, and catch hole-card peeks sitting at first or third (depending on shoe/machine location).
But even when that happens, it must get communicated from 'upstairs' pretty quickly, as there always seems to be a jump in "heat" from the pit at such tables... at least at blackjack tables.

Best table I ever ran into for this was a 3-card table many years ago (Mirage). The dealer was routinely 'airing' his hand in such a way that you could frequently glimpse his 'bottom' card sitting at first. This was particularly helpful when it was a Q, K or Ace...otherwise, not so much.
Still...even then... after about 30 minutes, the pit came over, talked with the guy, and he stopped doing it. Fun while it lasted, but certainly not anything one could really count on.

The "Who Wants to be a 5th Grader?" slot machine gives you bonuses for answering trivia questions. Bonuses are low however, and you get 30 seconds to answer, so anyone can do a quick search on their phone for the answer.

I believe Nevada is in the process of approving skilled based machines.

Many of those games are going to be based on arcades skills though.
