    Queso fundido.

    After attempts at being so-called purists and using Oaxacan cheese, we gave up and went with Velveeta. It seems every joint swanky or skanky we tried, they all used the orange blob (although for faux authenticity you can use the white variant).

    Oh, and you gotta use Rotel's, too.

    Now we doctor it up with ground sausage, spinach and onion, serrano and garlic, but at the core it's those two internal-aisle staples that make it. :nworthy:

    Cheez-Crack

    One small block Velveeta
    1/2 jar grated horseradish
    1/2 jar dry sherry
    Worcestershire to taste

    Place all ingredients in a food processor and blend. Add hot sauce to taste (optional). Pack into a container and refrigerate overnight.

    I promise you, put this out at a party and it will disappear in a flash. Nobody will ever guess the base, either.

    I love velveeta for dips or otherwise when I need "cheese" to melt easily. I like that there are new versions (lower calorie, queso/white, etc)

    And I love that I even found a recipe to make my own, since I dislike processed foods! Haven't tried it yet: http://www.browneyedbaker.com/diy-homemade-velveeta-cheese-recipe/

    (laughing at "internal aisle" because I had it on my shopping list to make something for my husband and he happened to be shopping with me - he didn't understand why I was in the pasta aisle and then why it's not refrigerated. Because it's shelf stable! Blew his mind -he has certain 'dairy purity laws' - a Milch Reinheit version of Reinheitsgebot if you will)

    The cheese I use is Chihuahua. It is the prefect melting cheese. Simply slice thinly and place it in an oven proof dish and bake to desired doneness. You can then top with anything you like. I usually do Mexican Chorizo, sliced sauteed mushrooms and or Poblano chiles. I like velveeta with rotel for the tex mex dish chile con queso but that is more of a dip it is very tasty but not real cheese in the traditional sense.

    Yep, Velveeta and Rotel has been my NFL Sunday staple since college. Probably a week's worth of sodium in there, but it is damn tasty.

    As a kid, Que Bueno nacho cheese sauce from my Little League snack bar was my favorite. Every once in a while I'd convince my parents to buy the gargantuan can at Price Club, which took up half a shelf in the fridge and would get gross before I ate a quarter of its contents.

    As an adult, I've been tempted to try the Velveeta/Rotel combo for a few years now. Maybe this thread is just what I needed to nudge me over the ledge.

    Hell, I use it every time we brew:beer: I love that word. And no, very little of our beer is actually pure. Certainly not the beers I prefer - sours, saisons, farmhouse ales, wheats....

    If you look at the recipe I linked to make your own velveeta, the ingredients are gelatin, milk powder, and shredded cheddar....I'm sure the actual velveeta has more ingredients,but the reviews for the make-your-own recipe state the texture & meltability (sic ;-) are the same.

    And no one in this thread has mistaken velveeta for cheese :peace:
