I love Big Al's Oyster Bar at the Orleans. I almost always get the Jambalaya Pasta. I've only eaten at the Cortez Room at the Gold Coast once, but really enjoyed it and thought I got a great bargain. And I know lots of folks are indifferent about Hugo's Cellar at the Four Queens, but I've probably eaten there 15 times. The only thing I didn't like was the Chilean Sea Bass. Have had steaks, salmon, scallops, and swordfish, which they no longer have on the menu.

Here are the ones that come to mind immediately as being consistently good:

Chicago Joe - smaller place near downtown. Always great.
Bootlegger - just south of the mall. Always great too.
Billy Bob's at Sams Town - Out in the toolies but great.
Jerry's Nugget cafe - Dicey area of town but great prime rib.
Trevi at Caesars - Great for people-watching. Get a table up front.
    Memphis BBQ on Warm Springs.
Cafe Bellagio - Better than yer average coffee shop!

On the "I like it but you might not" list are:

Denny's downtown - Usual menu, but full bar.
Battista's - Yeah, yeah, I know, but I've never had a bad meal there!

And a couple where I've been only once but are on the must-do-again list:

Golden Steer - very old-school steak house.
Bob Taylor's Ranch House - out in the toolies but worth the trip.

Never had the Sunday brunch (we will one day.) Have been there several times and always a great meal. Last trip was for lunch. I had the special. I believe it was called James Beard's tour of the world. So many layered flavors; it was excellent. Their pineapple upside down cake with homemade pineapple ice cream is a " when Harry met Sally" moment.
I also want add Emeril's @ MGM, Baacanaal buffet, and of course, In-and-Out Burger!

Another big vote for Joe's Prime Steak and Stone Crab. Been there twice on some trips. Also another vote for Grand Luxe Cafe in The Venetian.

L'Atelier de Joel Robuchon and é by José Andrés.
Highly recommend the tasting menu for both (it's the only option at é).

I went solo to both and it was still a great experience, especially at é.

I agree on Al's Oyster Bar at The Orleans, always excellent.

Ellis Island cheap and good, especially the BBQ

    Pizza Rock is very good
