A little background here, I need some referrals.

I visit 3-4 times per year solo or with buddies but am taking my wife for the first time in many years (not her thing but going for my birthday). So my usual dining experience is solely based on food quality and/or expediency, décor not really noticed (yah, I know). We have been to many fine restaurants in the past but not at the newer properties, Cosmo, Aria, etc. that emerged since the last time she joined me so I would like to take her to someplace new.

Wife is a detail person and loves to decorate. Not really concerned about the view, focused on decorating, lighting, fixtures, wall and floor coverings, etc. as well as a more subdued, quiet setting for a romantic dinner. Oh, and a great menu too!

    Appreciate any and all suggestions!

    Consider Bardot Brasserie at Aria.

Sage at Aria would be a great choice, as would Picasso.

    A few come to mind...

I think CUT at Palazzo is very sexy and their food is fantastic (if you're a carnivore).

We're trying e by Jose Andres at Cosmo on an upcoming trip, which we haven't been to... but it's a very exclusive type thing... their decor looks funky and the whole experience is about the food presentation and it's 20 or so courses (small bites), it would be great for a date, but a more uptempo type thing than "romantic".

Another fave is Carnevino, and they have these private booths that have a curtain... pretty sexy and visually dynamic, not to mention their BBL Ribeye for two is heavenly. This is also at Palazzo.

Not sure if you've been to any of these... but hope these suggestions help.

    Have a LUCKY time :)

Of all places, The Cheesecake Factory in the Forum Shops has an incredible interior. It really is a beautiful design.

    Sinatra at Encore.

Beautiful crystal ship above the bar...light fixtures on the ceiling reminiscent of abstract jellyfish...pale green table linens with embroidered dragonflies on the napkins...votive candles on the table to add to the ambiance of subdued, romantic lighting. Ceiling to floor windows (on one side of the restaurant) with a beautiful view of the decorative patio (With seating on special request/reservation)...Just a fantastic setting. (Italian food the specialty).

I think you will enjoy e' by Jose Andres, I'm returning there with friends for the 3rd time on April 8th.

I second your suggestion of Cut. I eat there a lot and it's consistently great on food and service.

Stack at Mirage. It's dark and sexy and the food is great.

Lakeside at Wynn. The décor there is bold and beautiful.

Another vote for Sage. I also think the decor at Bouchon is great. Cool bar, in particular, and love the floor tile. Joel Robuchon and L'Atelier de Joel Robuchon are excellent -- Joel Robuchon is particularly stunning. One of the most elegant dining rooms I've ever seen.

Thank you for all of your replies. We've been to Picasso and Joel Robuchon before, both beyond outstanding but want to try something new. Based on your recommendations, we'll definitely dine at Sage and the second night at one of the others, leaning to CUT for me or Lakeside or Sinatra for her. I forgot both Palazzo and Encore also were not built yet the last time she was in town so need to spend some time there as well.

Picasso was definitely going to be my recommendation. Food is top-notch and you really cannot beat the atmosphere of original Picasso works plus Bellagio lakeside/fountain view. And the service is impeccable. I've eaten at the bar at Sage a couple times and been immensely impressed, it's a beautiful space with great food, so hopefully you guys enjoy it.
