With the wide range of restaurants at Aria, there's a lot of searching around to do. I figured I'd ask the members to give me a one sentence recap of each restaurant you've eaten at and one recommended dish. I tend to go for what I'm used to and comfortable with (usually upscale steakhouse) and want to branch out a bit on my upcoming solo trip. That's not to say I won't hit up a good steak spot once during the trip...Here's the list:

    Aria Cafe -
    Bar Masa -
    Blossom -
    The Buffet -
    Five 50 -
    Javier's -
    Jean Georges -
    Julian Serrano -
    Lemongrass -
    Sage -
    Tetsu -

    Should be interesting...thanks in advance!

I am very sorry, I have nothing to add here, but i think it is a brilliant idea to make them one-sentence reviews. While detailed reviews are helpful, it can be difficult with the wide array of options to zero in on restaurants. I think there ought to be a website with strict one-sentence reviews (run-on sentences accepted).

Café: Interesting décor with average food
    Bar Masa: Yummy sushi
Buffet: It's a buffet, so you know there are a lot of things to try and none of it is spectacular
Five 50: Interesting pizza combinations that work well together
Javiers: Tasty Mexican food surrounded by intriguing artwork
Jean Georges: Feels like a dining room surrounded by cow noses
Julian Serrano: Best food on the Strip with the creamy risotto as a must have
Lemongrass: Thais food with a wide range of spices
    Sage: Mysterious menu and décor
Tetsu: The perfect place to eat if you're not hungry

I've only tried half of the restaurants at Aria, but of the ones I've been to UK has nailed it.

Julian Serrano - party of 5; went for $39 prix fixe early dinner menu... unimpressed with service - felt that we were imposing on them; wine pairing sub-par (white wine for 4 of us regardless of type of entree ordered; food was good and plentiful.

Aria Cafe - great for quick dinner or EXCELLENT choice for breakfast. Always great service.
    Bar Masa -
    Blossom -
The Buffet - decent, but Im not a buffet person. They are all pretty much the same to me
Five 50 - Excellent Pizza, good place for a quick snack right off the casino. Not a fan of how they have table set up but I dont think they want you to linger for long.
Javier's - Great Mexican food for Vegas!
    Jean Georges -
Julian Serrano - My favorite restraunt at ARIA. Would go there every trip if we could. I am excited to try to the tapas place at Bellagio too though.
    Lemongrass -
    Sage -
    Tetsu -

LOL, Yeah, that has always been a little disconcerting - still good steaks though. (Helps to just think of them as designs) :)

Serrano: a must each trip, great Tapas both in variety and quality and the best Sangria I have had anywhere in the world including Spain and Brazil
Five 50: Simply the best pizza in Vegas
Javiers: Outstanding Mexican food with the most interesting décor, you can find something new every trip it seems
Lemongrass: second best Thai food in town, which makes it pretty damn good.

Five 50 - Way too greasy, secret pizza at Cosmo is much better (IMO)
Julian Serrano - AMAZING and a MUST TRY!
Lemongrass - Overrated, or maybe we just have really good Thai food here in Halifax, but all of us thought it was just OK at best!

lol, the one time I ate there with my sister, we kept staring at the walls trying to figure out the designs. Once we finally figured it out, we were amused

Blossom - Pricey, but solid eats and attentive service. Try the Shrimp Toasts and Chilean Sea Bass
Jean Georges - Underrated; excellent steaks and seafood. Try the short ribs.
Julian Serrano - Beautiful dishes, solid but they fail to impress. Try the white ceviche.
Sage - Stellar, each and every time; my favorite restaurant in Las Vegas. Try the sweetbreads and if gnocchi is on the menu, get it.

Great stuff everyone! I think the biggest challenge will be deciding which I can squeeze into my dinner plans for three nights...

    The Buffet - Meh
    Five 50 - LOVE LOVE LOVE FIVE50
Javier's - great decor, great margaritas (try the pineapple and the tamarind if you are looking for a change of pace), loud, decent food, but a bit overpriced and bland compared to what I am used to
Julian Serrano - one of my favorite places to eat; get the scallops, the potatoes with the aioli, and the sliders (yes, the sliders were great)
Lemongrass - You can order your "heat" level from 1 to 10, so I ordered a 3 for my fried rice and it was brutally hot; the food was very tasty
