What do you think the chances of me being able to check in around 2:45 on a Monday at CP? For a Forum Tower room. 12/1

Some places charge for early check in. Ask first.

Whenever I stay at Caesars, I'm always switching from another hotel, so I'm always there between 11:00 and 11:30am. Of the 6 check ins, several different days of the week, I only had to wait once, it was a Saturday, and that one time, the room was ready by 1:00pm.

Mondays normally are easier days, shouldn't be difficult especially at 2:45 which is not too much earlier than the regular check in time which I believe is 3 or 4 pm.

Do the $20 trick and you will likely get a better room and early check in waived, I usually check in around 10 am and have never paid a fee.
