Creamy pepper(corn) sauce...

    Maybe a silly question, but I love a good steak with creamy pepper(corn) sauce :licklips: and went to some really nice steakhouses in Vegas (for example at Binions and Circus Circus), but they never seem to serve any creamy sauces like pepper- or mushroom- sauce for with the steak (exept maybe bearnaise sauce, but I'm not so fond of that). Is that not common in the USA? And would anyone know some decent steak places around the Strip where they serve it?

    Steak au poivre.

    I don't keep a running tally, but I know over the years it has been available at CC Steak House, Charlie Palmer Steak, the Palm, S&W, Mon Ami, Golden Steer ...

    Vegas is the first place I ran into that reduction sauce when I ordered au poivre. Hated it:nono:

    I want a seared peppercorn crust served med-rare, no sauce! The idea seems to be spreading, now when I see au poivre on a menu, I have to ask how it's prepared.

    Indeed, there's peppercrusted and au poivre. But no need to wag that finger simply because you don't like a preparation. :wink2:

    Au poivre is just a quick easy fix at home, btw.

    Sauces are very classical, and I think we're going trending back into a period in cooking where more and more sauces will be used. It's cyclical, like cocktails. Chefs/restaurateurs in recent years seem to have been in love with "naked" steak preparations (as a general rule, obviously there are exceptions ... that's why they're called trends).

    Not being a steak eater because I don't like dry meats I had to look up the recipe for Steak au poivre, and that sauce looks delicious! Being a sauce lover, I do hope Ken's prediction of them trending back happens. Yum.

    Prime and JG have the widest selection of steak sauces I have seen.

    Honestly, Lea & Perins (sp) is honestly my favorite over any other!

    Anthony's at M Resort offers there steaks with a choice of bernaise, bordelaise or peppercorn sauce. :licklips:

    Prime does have great sauces! Stack also has a great peppercorn sauce.

    I like the other type (non creamy - not sure what it is called), type of peppercorn source.
    Sometimes I find that hard to find.
