    a) it not having to be completely unique to Vegas and
    b) for me personally to eat this only in Vegas

    While my restaurant choices may or may not be unique to Vegas, they are unique enough for me in Vegas:

    Lobster risotto at Le Cirque/Bellagio along with everything else on their menu
    Breakfast at Bouchon/Venetian
    Golden Pigs at China Poblano/Cosmo

    Holstein at Cosmo. Our favorite burger anywhere. And a plus, it's not a la carte like many burgers on Vegas.

    Half a pound of juicy, drip-down-your-hand beef, and tasty beef, not the "looks like a burger, tastes like filler" stuff I've had at many other places, even pricier places.

    Burgers and pizza are very subjective, but it's our all-time favorite. :love::love::love:

    The $8.95 steak and lobster dinner has been cleared to that great dish sink in the sky.

    If I drive out to Henderson, I can get a shrimp cocktail with a 99 cent upcharge to some complimentary second-hand smoke exposure that will someday cost me thousands of dollars in health care.

    The only thing I can think of that is still really unique to Las Vegas is a buffet. Also, the humble coffee shop, or what is now often called a diner to avoid confusion, is nearly extinct in my high-cost state. Ergo I make an effort to go to several of them when in Las Vegas, where they are also threatened but some manage to stick around.

    So in Vegas we usually do one midweek big splashy buffet brunch, multiple buffet breakfasts with custom omelet, a few coffee shops (Sarah's Kitchen, Coronado Cafe, etc), and eat at a few places that are our favorites, not because they are in Las Vegas, but because they are in a place we often go on vacation, which happens to be Las Vegas, and vacation is a time we disproportionately eat in restaurants. These include Markato Ethiopian restaurant, Monta Ramen house, and either Harrie's Bagelmania or the Bagel Cafe.

    I live between Philly and AC so many of the restaurants in LV are also available to me at home. Grand Luxe, yes. Michael Mina/Wolfgang Puck/Gordon Ramsey/etc, yes. Great Chinatown that knocks the socks off of LV, yes. What I don't do at home is eat out often. So, my two week trip to LV is a cornucopia of all sorts of restaurants to try. I pour over web sites for months in preparation.

    I just wanted to add that when my daughter was in 6th grade, every student in her class chose a US state to do a project on . One component of the project was to serve a food unique to that state. She drew Nevada, and the food, natch, was shrimp cocktail.

    I’ve read Las Vegas consumes more shrimp daily than the rest of the nation combined.

    Pretty impressive considering the location in the desert

    Mesa Grill (shrimp tamale to die for), Mon Ami Gabi patio dining (location, location, location), Jaleo (I love all of the food, but I would go there for dessert only)

    Two weird, small ones for my wife and I. There are others that really drive home the Vegas feeling for us, but since some of them were mentioned I wanted to throw the odd ones out.

    -HiChew candies from the ABC stores in the Miracle Mile shops
    -Peanut Butter Indulgence bars from the Ethel M stores at McCarren

    My wife is way too excited over the HiChews every trip we take. We could buy them at home, but they do have a couple of ABC only flavors so I give her a bit of a break on that one. She stocks up the first day and generally still wishes she had bought more by day 2 or 3, so we always end up going back again.

    The Ethel M chocolate is my doing, and it’s usually the last thing I eat in Vegas since we generally arrive too early or late for the store hours on the way in. Unfortunately I’ve heard they no longer carry the Peanut Butter Indulgence bars so that one is likely coming off the list.
