In this town I am so surprised that more restaurants aren't open all night. Now, I know if the business supported it they would be open.

How so? You mean like linen and china type restaurants?
Yeah, the demand for that sort of fades before eleven.
'Cause there's no real shortage of 24 hour food to be had in Vegas.

Practically every casino has a restaurants (or at least somewhere to eat that's open 24 hours, just not a buffet.

It takes a lot of manpower and product (and business) to stay open 24 hours and even more to run a buffet 24 hours.

I'm guessing this buffet will only be 24 hours until their new coffee shop is remodeled/opened. With all the graveyard specials around, it's hard to actually gorge at a feeding trough in the wee hours. (This is from one who is usually in bed by 10:30, so YMMV.

No, that trip is my first of 2019 and I leave on Saturday the 5th. I will just miss you and we'll probably cross at the airport.

A 24 hour buffet sounds like a real bad idea.

I had that buffet about 1 am in the morning the Saturday night/Sunday morning of Thanksgiving weekend a few hours before my 6:30 am flight back home. It wasn't bad. I would describe it as decent. It's not the Wynn buffet but potentially at 1/6 or 1/7th the price, no one should expect that. Kind of what you would expect, but items were fresh and it was the fuel I needed. I had a free buffet coupon that I had received as part of a bingo tournament I had played at Palace but if you have just a few points the meal is close to free. I think the discounts depending on your stations membership level can be as much as half off if you pay with cash or points. Basically, at 2 in the morning. potentially for $10 (with discount) and including a big tip, you can have french toast, chicken, carrots, bacon, etc. and with non-alcoholic beverages included. Yeah, that's what I had :), and then I got a Lyft back "home" to Wynncore, where I had cancelled my Saturday night dinner reservation for Cipriani as I was enjoying playing slots at Palace Station. Crazy, maybe, but I had a blast. Exhibit A of doing what you want to do in Vegas and when you want to do it, even if it seems crazy to others!

One other benefit of a late night buffet is that when I am hungry and tired late at night, I get impatient in ordering and waiting for food. I think I got my food, drinks, ate, left the tip and was gone potentially before the food would have even arrived if I had dined at a late night (and likely understaffed) cafe.

I would definitely visit the buffet again and I'm sure during regular hours there are many more options. It was limited late at night but there was plenty of variety depending on whether you wanted breakfast or dinner or a combination of both!

Not to mention the overhead -- cost of a LOT of product that ya might might wind up throwing out.

Maybe Palace Station, as a local casino, is banking on the working people who got off their midnight shifts who want to eat something before heading home?

Like @Flowers mentioned, it seems faster to access your food and be on your way than if you were at a cafe. Vegas is a true 24 hr. town and the countless hotel workers, transit workers, construction workers, etc. now have a quick option. And they can gamble a bit too before heading home!

Gaming laws require casino have some food place open 24/365. With the cafe being remodeled, Palace buffet meets the requirement. It will go back to regular hours once the cafe reopens. Much improved from the upstairs buffet.

The upstairs buffet was a joke. The new and improved buffet is a real value, and worth the price of admission which isn't much.

Watching the video I also forgot about the omelet station. I had a fabulous omelet as well and as noted in the video, late at night there's not omelet line!
