I like to get my host little local things to thank him for the work he does for me - in this case I'm bringing him a 6 pack of craft beer from a local brewery. My plan is to bubble wrap and tape each bottle, put them each in a hefty plastic storage seal bag, and put them in my checked luggage. Does this sound sufficient for transporting? Anything I should watch out for or keep in mind (like will the pressure cause the bottles to blow the tops off etc)? My understanding is that flying beer within the country is legal in checked luggage.

I would be concerned about the pressure changes but other than that I do not see an issue with it.

The only issue you need to be concerned about is to wrap the beer properly. I have done this many times with beer, wine and other booze and never had a problem.

Don't worry about the exploding bottle issue, that is only an issue on freight flights, due to things like pets being transported on passenger flights the compartments are pressurized, this last trip I took a few to Sarah and Mandalay to sample from my local brewery and had zero issues.

On most aircraft only one compartment is pressurized. I don't know if there should be concern of bottles exploding in the others or not.

I've packed beer cans and bottles inside my suitcase (usually just wrap them in clothes) and I've never had one break/open/etc. You should be safe
