Carbone at Aria

    I just saw on Aria's home page that they are announcing a new restaurant, Carbone, to open this fall. A classic Italian featuring "glamour, showmanship, and tableside service" claims the website blurb.

    It's replacing Sirio, which always got mixed reviews in the past so hopefully this will be an upgrade to the dining options at Aria.

    I have yet to try the NYC location but I'm looking forward to this opening.

    I liked Sirio. It took the restaurant a few menu changes to find its footing, but I thought it was very good in its final years. Sad its gone, but happy they are putting something in that space soon

    It should be nice but honestly I don't know if I am going to look forward to it. I mean, there are already more than a hundred itailIan restaurants on and off the strip, to me it's just a market that's already over saturated.

    But I also understand how Italian food is tied to Vegas history and all that. I love the Aria so still hope this one will do well, I will also try it out given the opportunity.

    I also liked Sirio.
    The location of the 3 restaurants on the second floor is a challenge.I don't think Aria did a good job marketing any of these restaurants.
    American Fish failed despite being a "top ten" restaurant it's first year. Then Sirio goes down although I heard there were some internal family problems that contributed.
    I hope Carbone has great food and attracts people from other hotels like Raos at Caesars.

    I agree about the marketing. When Aria first opened, American Fish was the only restaurant and menu worth trying, IMO. The dining options at Aria have improved substantially since it opened. But I still have never had a problem just walking up and getting a seat immediately at any of those restaurants in that little pod

    That has also been my experience until 3 weeks ago.
    Walked into Bardot and every seat at the bar was taken and lots of people standing.All tables full with people waiting outside.
    I'm guessing part of the crowd was because it is so new and the positive buzz it has been receiving.

    You're right. I really wasn't thinking about Bardot. Last time I went there, it was pretty packed

    The second floor seems to be a tough place to be in Aria. For a casino only being open for a relatively short period of time (8 years?) the amount of places that have cycled through there (buffet, Elvis CDS show, Sirio, American Fish, Gold Lounge) seems quite high.

    Interesting point. But its mostly changes for the better. I never saw but heard the Elvis show was not good. Lot of good changes on other floors as well. They dropped their snack bar area and replaced it with the better 550 Pizza. They replaced a wanna be trendy bar (think it was called Union) with a very good Mexican restaurant (Javiers). I miss Sirio and American Fish, but they did not disappear because of poor quality. And Bardot is a good replacement. They updated the high limit room. Bar Moderno got a refresh a couple years ago. The new bar/lounge in the center of the casino is a huge upgrade. Guess I don't mind a lot of changes if they are for the better

    Def. agree that it's for the better. I ate at the old place before 550 came in (was it called Skybox?) and it was alright, but I do love 550. I'm glad to hear that Bardot is doing well, but I still miss American Fish, loved their happy hour specials. :(

    I'm looking forward to Carbone, their NY location gets great reviews and it's old school 50's vibe should work well in Vegas

    Just got back yesterday from 5 nights at Aria. I can't agree more about the second floor location and lack of ambiance up there hurting the restaurants. Bardot is a beautiful restaurant but it wasn't all that busy last week. This was our first time staying at Aria and though it is a beautiful resort with a lot of plus's they do seem to have some operational challenges. If you want to charge a drink to your room or keep a tab open at the Alibi bar you have to give them your drivers license. How scary is that? They keep it until you are ready to cash out, are they kidding me. I am going to give a complete stranger my drivers to take out of my sight, in Vegas? When I insisted the cocktail server bring it back she did and then sat next to me and told me she gets complaints about the policy all of the time. She even said she wouldn't do it. I told the bartender at Lift bar about it and he said he was aware of what Alibi does and there is no way he would give them his drivers license. He also explained that the Alibi bar is independently owned from Aria and it is their own policy not Aria's. One more example of an operational issue problem. Yesterday when we checked out and went to the airport about 7:15 am there wasn't any taxi service at the exit near the registration desk. I thought I just couldn't see it until an employee said we had to wheel our luggage to the other side of the oval where the taxi station was. I have stayed at many places in Vegas and this is the only one that didn't have taxi service in the morning near the registration desk. I say morning because we did get a cab there other times of the day.

    Yikes. I'm with you, if they wanted to keep my license then I would not open a tab.


    I have always had to walk around to the other side of the traffic circle to the taxi station. I am a bit surprised you were able to get into a cab on the other side near the desk.

    Is this the place that is going to be pretty high end? Like $200 per person for dinner high end.

    I don't know, but I would be surprised if its that's high end. I have eaten every restaurant at Aria except Blossom and I have never had a tab that high just for me. Of course, I don't gorge myself or drink crazy priced alcohol, so maybe I am not the best barometer

    I would add Jean Georges to that list (and maybe Sage). My typical tab at those places is anywhere between $50 and $130 for dinner, just depending on what I order
