Thanksgiving Dessert Ideas

    I am trying to plan desserts for Thanksgiving and I need help with something with lower carbs. We have someone on a restricted diet and stuff like ice cream, bread and pie crusts are off limits for a few more months. She can have fruit so dessert is possible as long as we are thoughtful. Any tips or ideas?

    There are some really yummy pumpkin custards that are low carb - I can't remember which I've used in the past, but this is the sort of thing I'm talking about: http://www.sugarfreemom.com/recipes/healthy-pumpkin-pie-custard-gluten-free-low-carb/

    Pumpkin custard is great for a lot of food allergies and special diets - the one I posted is low carb & gluten free, can also be dairy free. There are versions that are vegan, even.

    For fruit, I LOVE an elegant poached pear. I prefer to poach in red wine, but if alcohol is an issue, there are other routes to go. But look at how gorgeous this is! [​IMG]

    I eat a low carb diet and have used these recipes before for Thanksgiving:

    You may need some items not common to the average pantry for baking low carb and sometimes not cheap! For crusts I use ground up almonds - referred to as Almond Flour - and ground walnuts mixed and pressed with butter- kind of like your average graham cracker crumb base.

    I commend you for going to the effort to accommodate - sometimes it is not easy!

    I don't have my recipe handy, but I did a pumpkin cheesecake with a ground almond "crust" that was delicious.
