We have a vacation (air, hotel) booked through swa. There is a chance we may want to stay an extra day. Once we are on our trip will southwest put us on a later flight if we call without much of a penalty? We could book a room on our own for a night. Would it be a big hassle with swa?

It will not be a hassle. However, you will most likely have to pay the difference between what you paid and the current price which could be substantial. No charge to rebook though. This is how it works on regular flights but I'm not sure if it would be the same on package deals.
