I guess it depends on how you are looking to spend. My two favs on the Strip are Blue Ribbon at Cosmo and Mizumi at Wynn. Their menus and pricing are available online

There's the Rock N Roll Sushi restaurant in the run down strip mall just across The Strip from the planned Resorts World Site. It's usually $20 for all you can eat sushi. People seem to either love it or hate it. I think the trick is just knowing what to order.

I like Sushi Samba, because you can mix the Sushi & Sashimi with some other things.

Not sure if it would be in your price range, but the Palazzo website has pricings on the menus iirc.

In a casual dining thread on another forum, suggested this place -

    Sakana
    3949 S Maryland Pkwy
    Las Vegas, Nevada
    702-733-0066

Sakana def the best ayce sushi place in town. really big fish:rice ratios and quite a few sashimi offerings.

    Guess he likes it :)

Koi at Planet Hollywood, my wife and I went in 2014 and thought it was fantastic. My wife is picky about her sushi. I don't really recall what the tab was so it must have been within reason.

My sushi cravings tend to be at night... does anyone know of somewhere good that's open late/24 hours?

Goyemon gets rave reviews but it's not on the Strip.
