Makino Chaya at the Premium Outlets North.

Not only tons of cooked and raw sushi but many hot food items like shrimp tempura and beef short-ribs.

My personal preference would be a place that offers all you can eat sushi over a sushi buffet like Todai. At the AYCE places you order what you want and then it is prepared for you. At the buffets you can't order specific items and the food sits out until its gone. I don't spend much time on the strip but there are AYCE sushi places all over town. My favorite is Sushi Twister at Tropicana and Boulder Highway. I know, it sounds like an odd area of town for sushi but they do a very good job and the full menu is open to order from. Here is a list of AYCE sushi places from Yelp: http://www.yelp.com/search?find_desc=Best+All+You+Can+Eat+Sushi&find_loc=Las+Vegas%2C+NV

Goyemon Sushi on Decatur blvd was great. Cooked food available with sushi which is all made fresh to order. Awesome rolls too.

I too like Todai, go to their website and subscribe to their newsletter, they are always sending coupons and other deals.

Sushi Goyemon is good, but I like Sushi Mon on Sahara better. Same owners, the atmosphere isn't as nice, but I prefer their selection for rolls. I like spicy, they do it right. Nigiri is tasty at both.
