Zaba's Mexican Grill has finally opened in Plaza's food court after a lengthy delay in construction, and Pop-Up Pizza has just opened at the far south end of the casino. I got a sneak peak last month from the owner while they were finalizing construction and setting up. He's a very enthusiastic man and excited to have an outlet there. Will be eager to try both during my stay at the end of the month.

I will definitely check out Pop-up Pizza when I am there in two weeks. Not sure about Zaba's, but I do have some food comp to burn so I hope both of those places take Plaza comps.

What would be great is if Pop-up is open late. I would be more likely to gamble at the Plaza if I know I can sop up all my red, green and blue cocktails with a slice at 2 a.m. I know the economics might not work out, but it sure would be nice.

The Gold Spike tried a pizza joint but it never took off. At first they said they would be open 24 hours a day, and eventually they were only open limited hours, and then sporadically. The Spike staff told us it wasn't very good, and a source we have said they were charged 10k a month in rent for what was essentially a deli counter.

Their closing time is listed as "late", so I'm guessing it will depend on the patronage they get. Although it looks to be counter service, they were receiving chairs and such when I was getting my peak. Let's hope - I love a late night bite, too.

Zaba's was on my list last trip but I didn't make it; now that there's one at the Plaza I hope to get there next time!

    Looking forward to this.

I am loving what they are doing with the plaza.

What they are really lacking though is that late night cheap eats. Hopefully this fits the bill.

I ate at Pop Up Pizza last week, they seemed to be open past 3a on the weekend, but the weeknights they were closing up around 1-2a. A little pricy for a slice (around $3), but decent pizza to be sure, and right next to the South tower elevators, perfect if you are staying in that tower and want to take a slice or 2 back to the room. They also deliver full size pies to the pool deck.
