Choices for pizza? Pizza rock? Pieology? Naked pizza?
I have a car thus driving is possible.
Personally a big fan of Five50 at Aria. I don't love the whole charred/thin crust thing that Pizza Rock and 800 Degrees both do, though that's very much personal preference. I haven't been to Pieology, but from everything I've heard and seen, if you're coming from the west coast it's not worth making a special trip to; I'm skeptical of pizza franchises, and the whole unlimited toppings thing combined with how quick the pizzas are supposedly done makes me nervous (see also, Project Pie).
The one thing I'll say about Five50 is that the pizzas at the slice counter are fairly different from what's served in the main restaurant. The former are greasy and delicious to-go slices that are a fantastic compliment to a few too many cocktails; the latter are more "gourmet", and equally delicious (I particularly recommend the North Beach, and also do my own one with prosciutto and spinach, plus the crostini are always fantastic), but not quite what I'd want after drinks.
I was also going to mention Five50, we got the Gotham last visit and it was absolutely amazing, its definitely my go-to place now.
DOCG at Cosmo is more traditional and really good, but maybe a bit overpriced.
The (worlds worst kept) secret pizza place at Cosmo is pretty good for a quick bite.

I've eaten at Five50 inside Aria twice. Very good pizza but limited selection if memory serves me right. I don't know if you can custom order your pizza or not, I always just bought a slice of their "Gotham" pizza. It's pricier than most pizza places outside of Vegas, for sure, but it's not outrageous. It's a pizza/bar scene with both tables and high tops seating at the bar. About 5 beers on tap and a full bar, I believe.
Cosmo's secret pizza is pretty good for a quick bite. It's cheap (for Vegas) and there's only one size - 16" I believe. It's New York Style and it hits the spot for late night munchies. No tables, only standing areas and small bar tops protruding from the walls to eat while standing.
The pizza place in NYNY is on the second floor just inside the pedestrian walkway entrance from MGM Grand. I ate there once and it was decent, but I rate the other two above higher in terms of quality. Price wise, it is on par with food court pricing.
California Pizza Kitchen in The Mirage - this is obviously a chain restaurant so if you've been to one, it's pretty much the same sans the casino atmosphere.

Ditto on 550 in Aria, and the Gotham pizza there has our vote too. Aria's always the first rung of our trip, and 550 is always our first meal, with The Gotham! And we're opposites on pizza, he likes thick crust, I like thin, and we BOTH love the Gotham. Yes, it's "pricey" for pizza, but not by Vegas standards. $28 gets a whole pie and it easily feeds two hungry people, and, at least for us, it's really, really good pizza.

California Pizza Kitchen is certainly a choice. A tortilla with catsup and mozz would also qualify.
Grimaldi's and Five50.
There are two parts to Five50. The part you're describing is the slice counter out front, which indeed only has about 4-5 slice options and a handful of beers on tap. If you go farther in, though, there's a regular restaurant portion to it, which includes not only whole pies which are fully customizable (and they have some great toppings available), but also a pretty extensive menu of small plates, sandwiches, salads, and mozzarella/charcuterie. There are about 15-20 beers on top, with several local options, and a full bar as well.
Grimaldi's. Any location, although we prefer the one at Palazzo for obvious reasons.

Not many tourists go there as it's a ways off the strip, but go to Those Guys Pies if you don't mind driving. Its awesome. I've only been to the original location, but I'm guessing their new spot on the north side of town is equally good.
Grimaldi's is my favorite. 550 (try The Forager) and Secret are very good too. I've not made it to Pizza Rock yet.

Honourable mention goes to the place by the wildlife habitat in the Flamingo. Their pizzas are surprisingly good.
I went with the fast food pizza "pieology", surprisingly good with fresh ingredients and love the texture of the crust. Cheap as well. Not in the nicest hood though. At least when I went at night. Pizza was $8-9 I think. And as I mentioned it's more fast food like. Pizza takes 5-10 minutes.
I think the secret place at Cosmo is OVERrated, while the place at Flamingo is UNDERrated
Off Strip (a little bit,) there is a place in the shopping plaza across from the Hard Rock Hotel called Joe's NY Pizza. Not fancy but big tasty slices at a low price. Better than most of what you find in the big hotels. I don't know if I am just imagining it but "Secret" Pizza seems to have gone downhill a bit. I think my favorite place on the Strip is 800 Degrees. I think the one at SLS is better.
