This one had three rounds, two on Friday and the final, switch or stay, round on Saturday. We were randomly assigned machines for all three rounds at registration. Each round we got 10 minutes to accumulate as many points as possible, you do not wager points to perform a spin, it is all accrual. After the round, the slot tournament associate comes by and writes down your score and you have to sign to verify it was written correctly. After the third and final round they randomly pulled a bar from a bingo style hopper, the ball either say L, R, or S...which indicated whether we would move one machine to the Left, Right, or Stay at our machine.

The person with the highest sum of points after the three rounds won.

They also gave away 50,000 HGS points to a random machine at the start of each round.

Many work in the way DeMon2318 described.
Multiple rounds with some combination of total score or best 2 etc.
I have played in a couple that give you 50 spins per round. These are easier than banging your hand, wrist, elbow, finger or whatever on a machine for 10-15 min.
Occasionally they mix up the pay schedule where the lowest score gets the second highest payout and 10th place gets paid more that 3rd etc.
They are usually fun competition as there is no strategy. Just bang away.

Couple of pictures of the setup and the machine. And the stats...proves that even 1 extra spin could be the difference between pay levels
