OK- so where(if anywhere) can I get good Indian, Thai, Middle Eastern food on the strip?
For Thai, I really enjoyed SEA at Ballys. For the other two, I don't have much experience. Based on reviews, the best experiences will probably be off strip for all three.
I think Lemongrass at Aria is phenomenal, and they're also one of the only Thai places I've been to that defaults to standard Thai utensils (i.e., spoon and fork, rather than chopsticks).
For Middle Eastern, Cleo at SLS has some dishes along those lines (tagines, moussakah, shawarma, etc.), but you're probably going to better served going off-Strip, though Cleo is supposed to be pretty decent.
For Indian, I think you're pretty much out of luck on the Strip. I believe there used to be an Indian place in the food court at Riviera (though British-Indian, tikka masala and the like, rather than true "authentic" Indian food), but that's obviously gone now. I can't think of any other places on the Strip.
Another vote for Lemongrass @ Aria for Thai.

Might be true; never been there myself, but have heard good things about it. The OP was asking about places on the strip though so it doesn't qualify.
Yeah, I'd like to stick with the strip for the time being. Lotsa good ethnic here in DC, so it's not like I'm hurting for same. But, really like it, so figured I'd ask. Will try Lemongrass!
The best chicken tikka masala that I've had in Las Vegas (on & off the Strip) is from the Indian restaurant in the food court of the Fashion Show Mall across from the Wynn. It's kind of expensive for food court dining ($13 for a plate of CTM, rice, and a piece of fresh naan) but well worth it, IMHO. Probably the best food court food I've had at any shopping mall, Indian or otherwise.
